Cilantro and Garlic Potatoes image

Steps:

  • Heat the oil in a deep-fryer to 375 degrees F (190 degrees C). When the oil is hot, add potatoes, and cook until golden brown, about 8 minutes. Drain on paper towels.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the cilantro and garlic; cook and stir for about 5 minutes. After draining the potatoes, add them to the skillet along with the cumin, lemon juice and salt. Stir to coat the potatoes, and serve.

1 quart oil for frying, or as needed
4 large potatoes, cubed
1 teaspoon vegetable oil
2 cups chopped fresh cilantro
4 cloves garlic, minced

This is a Lebanese dish called coriander potatoes. They are a tasty side for grilled or roasted meats. I had these first in a Middle Eastern restaurant, and loved them so much I had to learn how to make them myself!

CILANTRO POTATOES with garlic and lemon image

Steps:

  • 1. Peel and cube potatoes.
  • 2. Grate garlic with a microplane into a small bowl. Rinse Cilantro and dry. Chop and put with the garlic. Squeeze lemon juice into the same bowl. Set aside. I didn't have any lemons, so I used lemon pepper pictured here.
  • 3. Heat oil in a frypan over high heat to 350. Add potatoes and fry, stirring periodically until golden brown, 5-7 minutes.
  • 4. Remove potatoes with a slotted spoon to a large paper towel lined mixing bowl, briefly to drain oil. Pull paper towel out from under potatoes.
  • 5. Add Cilantro, garlic and lemon to hot potatoes, Stirring to distribute. Season with salt and pepper. Serve warm or at room temperature.

2 lb potatoes, cubed in 3/4" pieces
1/4 c cilantro, fresh, chopped
1 Tbsp garlic, grated on a microplane or minced finely
2 Tbsp lemon juice, fresh. may substitute 1 tsp lemon pepper.
salt & pepper to taste
3-4 c cooking oil (traditionally olive oil is used)

Steps:

  • In a large cast-iron or other heavy skillet, cook cilantro and garlic in oil over medium heat for 1 minute. Add the potatoes; cook and stir until tender and lightly browned, 20-25 minutes. Drain. Sprinkle with salt.

ROASTED POTATOES WITH GARLIC, LEMON, AND OREGANO

For perfect Roasted Potatoes with Garlic, Lemon, and Oregano there is no need to peel them, but I suggest that you halve them, because they taste best when they can absorb more sauce.

Roasted Potatoes with Garlic, Lemon, and Oregano image

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
  • Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
  • Sprinkle with the fresh oregano and serve at once.
  • Variation:
  • Dissolve 1 tablespoon tomato paste in the stock, and reduce the amount of lemon juice to taste. Substitute Aleppo pepper or crushed red pepper flakes for the black pepper.

Steps:

  • Scrub potatoes and cut into wedges. Place in a large saucepan and cover with water; bring to a boil. Cover and cook until tender, 10 to 15 minutes. Drain and set potatoes aside.
  • Heat olive oil in the same pan over medium-high heat. Add potatoes and cook until browned, 4 to 6 minutes. Add garlic; cook for 1 minutes. Remove from the heat.
  • Stir in Parmesan cheese, lemon juice, salt, and pepper.

New Potatoes With Garlic and Cilantro image

Steps:

  • Place potatoes in a saucepan, cover with cold water. Bring to a boil and cook until just tender, 8-10 minutes. Drain.
  • In same saucepan, melt butter and cook garlic for 2-3 minutes. Add potatoes, seasoned salt and cilanto, toss to coat.
  • You can serve at this point, or sometimes I spray some olive oil on the tops of the potatoes, throw it all in a baking dish and broil until the tops are nice and brown. Either way, it's good!

Roasted Lemon-Garlic Potatoes image

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place potatoes in a 9x13-inch baking dish and season with garlic, sea salt, and pepper. Pour in water, oil, and lemon juice and mix for a few seconds with a wooden spoon to coat.
  • Roast in the preheated oven for 40 minutes. Turn the potatoes and continue to cook until all sides are golden brown, about 25 minutes more.
