CINNAMON SWIRL BANANA BREAD

I have tried many recipes for banana bread and hands down this is my favorite. I found this online and am posting this so I know exactly where to find it.

Cinnamon Swirl Banana Bread image

Steps:

  • Preheat oven to 350.
  • Butter and flour a 9 x 5 loaf pan.
  • Mix bananas, butter, sugar, egg and vanilla together. Sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. Be careful not to over-mix!
  • In a small dish, mix together the 1/3 cup sugar and cinnamon.
  • Add 1/2 of the batter to the loaf pan and then sprinkle a little more then half of the cinnamon-sugar mixture. Add the rest of the batter and then sprinkle the leftover cinnamon-sugar mixture on top.
  • Bake for 50-60 minutes or until the toothpick comes out clean.

Cinnamon Swirl Banana Bread image

Steps:

  • Grease and flour two 9x5 loaf pans. Set aside.
  • Mash bananas with vanilla in a medium bowl. Set aside.
  • Combine flour, salt, and baking soda in another medium bowl. Set aside.
  • Cream the butter and sugars. Beat on high 3-5 minutes, until very light and fluffy.
  • Add one egg at a time, beating thoroughly after each addition.
  • Alternate adding banana mixture and flour mixture (about three additions each).
  • Fill each loaf pan in 3 layers; after each layer, sprinkle on cinnamon. When loaf pans are full, use a toothpick or skewer to swirl cinnamon (do not overmix or the swirls will not be apparent). It is not necessary to use all of the cinnamon; use only as much as is desired.
  • Sprinkle each loaf with sugar (it will bake into a crunchy, sweet crust).
  • Bake at 350F 45-60 minutes, until a knife inserted in middle comes out clean.

  • In a small bowl, use a fork to stir together the cinnamon sugar swirl ingredients until thick and well combined. If your swirl is too thick to swirl, add an additional tablespoon of melted butter until it is thin enough to swirl. Note: if it’s too thin, it will just spread and not hold its swirl as the loaf bakes.
  • Spread 1/4 of the batter evenly into the bottom of the prepared pan. Dollop 1/4 of the cinnamon sugar mixture over the batter in the pan and then make a nice thick swirl through the batter with a table knife or bottom of a wooden spoon. Place 1/3 of the remaining batter evenly over the first layer and swirl with 1/3 of the remaining cinnamon sugar mixture. Place 1/2 of the remaining batter evenly over the second layer and swirl with 1/2 of the remaining cinnamon sugar mixture. Spread the remaining batter evenly over the top and dollop with the remaining cinnamon sugar mixture. Make large swirls throughout the entire loaf. Place six thin banana slices down the middle of the batter.

In a separate large bowl, beat the brown sugar and butter with a stand or handheld mixer on medium speed until well blended – about 1 minute. Add the eggs one at a time, beating well after each addition. With a wooden spoon, stir in the mashed banana, yogurt, and vanilla. Slowly add in the dry ingredients. Do NOT overmix. Batter will be thick.
  • Spoon half of the batter into prepared loaf pan. Sprinkle with cinnamon-sugar swirl ingredients. Top with remaining batter. Bake for 40-45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.
  • While the bread is cooling, make the glaze in a small bowl by combining the powdered sugar, heavy cream, and vanilla. Add more powdered sugar until you reached desired thickness. Drizzle over banana bread.
