CITRUS CHIPS

Say hello to your new favorite healthy snack. Baked low and slow, these citrus crisps taste like sunshine.

Steps:

  • Preheat oven to 175 degrees. Line 2 rimmed baking sheets with wire racks. Arrange orange slices over racks in a single even layer. Bake, rotating sheets every 2 hours, until chips are shrunken and dry, 4 to 6 hours. Let cool completely. (They will crisp as they cool.) Store in an airtight container at room temperature up to 1 month.

4 large oranges, such as Cara Cara, navel, or blood oranges, cut into 1/8-inch-thick slices, seeds removed

HONEY SESAME CRISPS

The warm cookies can be formed into ice-cream cones; or let them cool flat, and serve alongside a dish of fresh berries with whipped cream or ice cream.

Honey Sesame Crisps image

Steps:

  • Preheat the oven to 350 degrees. Line baking sheets with Silpats or parchment paper, and set aside.
  • In a small saucepan, combine confectioners' sugar, butter, honey, and orange juice. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute.
  • Remove pan from heat, and stir in remaining ingredients. Cool to room temperature.
  • Using a 1/2-ounce ice-cream scoop, drop batter onto prepared baking sheets about 4 inches apart. Bake until cookies are crisp and golden, 10 to 12 minutes. To form ice-cream cones, shape warm cookies around a cone-shaped dowel, and place upright in a tall glass to cool. For flat cookies, transfer from baking sheet to a wire rack to cool.

3 tablespoons honey
2 tablespoons orange juice
1/2 cup white sesame seeds
1/4 cup black sesame seeds
1/4 cup all-purpose flour
Zest of 1/2 orange, about 1 tablespoon
1 pinch of salt

SHREDDED-GREENS AND CITRUS SALAD

A sprightly blend of Brussels sprouts, radicchio, endives, oranges, and walnuts is refreshingly bright and crunchy in this cross between a slaw and kale salad. For crisp yet tender bites, rub the radicchio and Brussels sprouts with salt to relax them.

Shredded-Greens and Citrus Salad image

Steps:

  • Preheat oven to 350°F. Spread walnuts on a rimmed baking sheet in a single layer. Toast until slightly darkened and fragrant, 12 to 14 minutes. Let cool completely.
  • In a large bowl, toss Brussels sprouts and radicchio with 1 teaspoon salt. Rub mixture between your palms until greens soften slightly and turn shiny. Toss in endives. In a small bowl, whisk together vinegar, lemon juice, and oil; season generously with salt and pepper. Pour dressing over greens, tossing to evenly coat. Top with walnuts and orange supremes; serve.

3/4 cup walnut halves or pieces
8 ounces Brussels sprouts, trimmed and thinly sliced lengthwise (1 1/2 cups)
1 small head radicchio (8 ounces), cored and thinly sliced (1 1/2cups)
Kosher salt (we use Diamond Crystal) and freshly ground pepper
3 endives, trimmed and thinly sliced lengthwise (2 cups)
1 tablespoon white-wine vinegar
1 tablespoon fresh lemon juice
1/4 cup extra-virgin olive oil
3 oranges, peels and pith removed, cut into supremes

This lovely citrus glaze recipe should be used when making the delicious Triple-Citrus Cupcakes. The recipe was adapted from "Martha Stewart's Cupcakes."

Steps:

  • Whisk all ingredients until smooth and combined. Use immediately.

1/4 teaspoon finely grated citrus zest, such as orange, lemon, or lime
3 tablespoons fresh citrus juice, such as orange, lemon, or lime

CITRUS SALAD

The most beautiful ruby-red grapefruit is available in December; use it to make this jewel-like salad. In other seasons, the grapefruit will be smaller and you will need more.

Steps:

  • Working over a bowl to catch the juices, use a paring knife to slice between the sections and membranes of each grapefruit; remove the segments whole. Place each segment in bowl as completed. Repeat process with oranges in same bowl. Transfer to refrigerator. Recipe may be made up to this point 1 hour ahead.
  • Make vinaigrette: In a small bowl, combine vinegar, honey, and salt and pepper to taste. Slowly whisk in olive oil, then canola oil, until mixture is well combined. Set vinaigrette aside.
  • Just before serving, arrange radicchio and endive leaves on a large serving platter. Arrange grapefruit and orange segments in the center of the platter. Scatter red-onion slices over the top. Drizzle the reserved vinaigrette over the salad, and serve.

4 ruby-red or pink grapefruit, peel and pith removed
5 navel or blood oranges, peel and pith removed
3 tablespoons sherry vinegar
1 tablespoon honey
Salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
1/4 cup canola oil
2 large heads radicchio, leaves separated
2 heads Belgian endive, leaves separated
1/4 small red onion, very thinly sliced

Three Fruit Crisp image

Steps:

  • Heat oven to 350 degrees. Combine the fruit in a large bowl. Add spices and sugar, and mix together with a wooden spoon. Place in a large buttered baking dish, such as a 14-inch oval casserole or 11-by-7-inch pan.
  • Combine flour, brown sugar, and oatmeal in a large bowl. Cut in butter with a pastry cutter until evenly distributed. Stir in pecans. Spoon over fruit to cover.
  • Bake until juices bubble and topping is golden brown, 35 to 40 minutes.

2 cups cranberries (1/2 pound)
1 pound sweet pears (about 2 large), peeled, cored, and sliced
1 pound tart apples (about 2 large apples), such as Gravenstein or Idared, peeled, cored, and sliced
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup sugar
3/4 cup sifted all-purpose flour
3/4 cup pacled dark-brown sugar
3/4 cup old-fashioned oats
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces
3/4 cup pecans, chopped
