CJ'S SPICY CAJUN DIRTY RICE
This a great dish I adapted from several recipes. The great thing is you can make this as spicy as you want. This goes great with a splash of hot sauce on top and some corn bread. Yummy!

Steps:
- In a skillet, cook the ground beef and sausage until almost completely brown.
- Add the onion and celery. Cook for an additional five minutes, then drain off the fat.
- In a separate pot, combine the water, dirty rice mix, tomatoes, and kidney beans.
- Bring to a boil and add in the cooked meat.
- Return to bubble, cover, and simmer for 25 minutes.

CAJUN STYLE DIRTY RICE
A Cajun dirty rice or rice dressing recipe adapted to family tastes with the ground beef. It's one of the most requested meals in our home.

Steps:
- Spray a large non-stick pan with vegetable oil spray.
- Brown meat in pan along with diced onion, pepper, celery and garlic.
- Drain fat and season with cayenne pepper, onion and garlic salt.
- Add water and simmer for about 20- 30 minutes, until the vegetables are cooked down. (You may need to add a little water during the simmer time to keep from sticking.)
- Add Worcestershire sauce, Tabasco sauce, cream of mushroom soup and mirliton.
- Simmer for 15 minutes.
- Add cooked rice, stir gently, until all rice is moistened.
- Add mirliton (optional).
- Top with green onion and parsley, stir lightly and serve.
EXTRA SPICY CAJUN DIRTY RICE
This is one of many of my favorite kinds of recipes. I took a box mix...then made it awesome!

- 1. In large stock pot, brown ground beef. Be sure to use a fattier meat, and DO NOT DRAIN! Grease will be used later.
- 2. While browning the meat, generously season with ground red pepper, chili powder and Cajun seasoning. Stir, allowing spices to season meat. Add a healthy dash of ground ginger, then finish browning the meat. As meat is finishing, add 2 packets of Taco Bell Hot Sauce.
- 3. Prepare box mix as directed, using meat drippings in place of oil. Simmer for 33 minutes. Fluff, then serve. Great with crescent rolls or bread and butter

- Preheat the cooker on high, while you perform the next steps.
- Lightly cook bacon, until fat begins to run.
- Prepare chicken livers, removing any gristle, and chop fine. Add veggies, and cook for no more than a few minutes, stirring frequently.
- Add livers and ground pork to pan, and cook gently - DO NOT Overcook!
- Pour broth, spices, and rice, in with the livers and ground pork, and bring to a boil, then add ALL to crock pot.
- Cook on HIGH for 2 to four hours.

- In a large pot, combine rice mix, broth and water.
- Add Rotel, kidney beans.
- Bring to boil, then add meat mixture.
- Return to boil, reduce heat, and cover, stirring occasionally. Cook for 25 minutes, until rice is easily fluffed with fork.
