COCO - BANANA'S KENYAN DENGU
I adapted this recipe off a fellow vegan and it is just delicious! It is similar to Indian dhal, but it works extremely well with barley or couscous. Very tasty!

Steps:
- Boil the mung beans until they are tender.
- Meanwhile, heat oil in a pan and add the onion, garlic, capsicums and chilli.
- Cook until the vegetables are soft.
- Mash the mung beans with a potato masher and add the onion mixture.
- Add the tomato puree and pumpkin mash and cook for 10 minutes.
- Season to taste and serve.

- Heat a drizzle of oil in a large non-stick pot or pan over a high heat. Add the garlic and ginger, reduce the heat to medium and cook for 3-5 mins, stirring occasionally. Tip in the spring onions, all the cherry tomatoes, the coriander leaves and stalks and 1 tsp salt. Cook for 3 mins more.
- Add the coconut milk, chickpeas and lentils and stir well, then add the curry powder, turmeric, cumin, ½ tsp black pepper and the lime juice. Bring to the boil, then reduce to a simmer and cook for 5 mins. Add the spinach and wilt for a few minutes. Check for seasoning, then serve with pittas.

Steps:
- Heat the sugar in a small frying pan. When melted, add the bananas and caramelise on each side for 3-4 mins. Lift out and set aside.
- Tip the coconut milk into the pan with a pinch of salt, stir into the sugar and bubble until syrupy. Divide between 2 bowls, top with the caramelised bananas, then add a scoop of ice cream and scatter with toasted coconut.

- Set a 4-6 quart saucepot over medium heat. Add the sesame oil, chopped onion, garlic, and ginger. Sauté for 5-7 minutes to soften.
- Stir in the tomato paste, salt, cumin, coriander, turmeric, and cardamom. Sauté another minute or two.
