This is a great dish that easily doubles for big parties or potlucks. Also it is a great and different change to mashed potatoes.

Steps:
- Preheat oven to 350 degrees.
- Mix all ingredients except the cornflakes or crackers and the 1/2 stick of melted butter together in a bowl.
- Grease 9x13 inch pan (you can use cooking spray) and add all ingredients from the bowl to the pan.
- Just before baking, mix the cornflakes or crackers and the 1/2 stick of melted butter together and then sprinkle on the top.
- Bake for 1 hour at 350 degrees.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch baking dish.
- In a large bowl combine hash browns, potato soup, celery soup, sour cream, milk and onion. Mix well and then season with salt, pepper and dill weed. Spoon into prepared dish and sprinkle with cheese and paprika.
- Bake in preheated oven for 1 to 1 1/2 hours, or until well browned and bubbly.

This recipe came from my Nana (aka one of my best-friends) who has made it for every special occasion. It is so good but so bad but an absolute must for a comfort food recipe collection. Note: don't eat these first or you won't be able to finish your meal!

Steps:
- Peel and chop potatoes and boil in water until fork tender.
- Drain and mash potatoes in large bowl.
- Add cream cheese, sour cream, onion powder butter, egg, and garlic powder.
- Beat with hand mixer until fluffy.
- Scrape mixture into large casserole dish, and for nice appearance use back of spoon to "peak" potatoes like meringue.
- Dot with butter and sprinkle with paprika.
- *Mixture may be refrigerated at this point until needed, let stand at room temperature 1 hr before baking*.
- Bake in preheated 350°F oven for 30 minutes or until peaks slightly brown.
- Enjoy *this dish really holds its heat so be careful*.

SWEENEY POTATOES
This is a variation of a dish sometimes called "company potatoes," popular in the postwar kitchens of the 1950s, made with canned condensed soups and frozen hash browns. Maura Passanisi, of Alameda, Calif., shared it with The Times as a tribute to her grandmother, Florence Sweeney, who originally served it as a Thanksgiving side dish. Ms. Passanisi uses fresh russet potatoes and no condensed soup, but plenty of cream cheese, sour cream, butter and cheese. "Legendary," she calls the dish. And so it is. Small portions are best. It's rich. And feeds a crowd.

- Heat oven to 325 degrees. Put potatoes in a large heavy-bottomed pot and cover with cold water. Set on stove over high heat and bring to a boil, then reduce heat and allow potatoes to simmer until they have just started to soften, about 10 minutes. Drain and set aside.
- Combine cream cheese, melted butter and sour cream in a large bowl and stir to combine. Add enough milk so that the mixture is creamy but not soupy. Season mixture with salt and pepper to taste. Add potatoes to bowl and stir gently to combine.
- Generously grease a 9-by-13-inch baking dish. Tip half the potatoes into the dish and spread to the edges, then scatter half the grated cheese over the top. Add remaining potatoes and spread to the edges, then top with remaining cheese.
- Bake until casserole is bubbling at the edges and cheese has melted across the top, 30 to 35 minutes. Sprinkle with parsley before serving, if you'd like.

- Scrub potatoes with a clean scouring pad or the rough back of a sponge (no need to peel them). Slice potatoes into 1 - 1 1/2" thick pieces, transfer to a pot and add enough warm water to barely cover potatoes. Sprinkle with 2 tsp salt add bay leaf.
- Bring to a boil then boil partially covered for about 15 minutes or until easily pierced with a fork. Drain potatoes. Drizzle with melted butter and toss to coat (note: it's easier to toss in a large mixing bowl).
- Sprinkle with 1/2 tsp salt or to taste. Add 1 cup chopped parsley and toss to combine. Toss again just before serving to re-coat with any butter that has collected at the bottom.
