Steps:
- In a large bowl, combine the first 9 ingredients. Add pork; mix lightly but thoroughly. Shape into twenty 3-in. patties., In a large skillet coated with cooking spray, cook patties in batches over medium heat until a thermometer reads 160°, 5-6 minutes on each side. Remove to paper towels to drain. Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. May be frozen for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

- Combine salt and pepper, fennel in the bottom of a bowl. Add pork and mix to combine spices. Pour 2 tablespoons maple syrup over the pork and work the meat again to combine the maple syrup. Form meat into patties, 2 to 3 inches round. Cook patties in 1 tablespoon oil in a nonstick skillet over medium high heat 4 or 5 minutes on each side. Drain sausage patties on towel lined plate, then serve.

Tasty sausage patty recipe, from a recipe card in my files, with ingredients readily available. Substitute ground chicken or turkey for the pork if you like, and adjust the seasonings to taste. The patties are good served on toasted English muffins with a slice of cheese and a fried egg for a 'McMuffin'. Add home fries and sliced fresh tomatoes for a 'big breakfast'. Times given are estimates and do not include the one hour chilling time.

- In a mixing bowl, stir together all the ingredients, except the vegetable oil for frying, until thoroughly combined.
- Moistening hands with cold water; shape the mixture into 12 patties about 1/2 inch thick.
- Chill in one layer for one hour, if time permits, to firm the patties.
- In a skillet, heat a little vegetable oil over moderate heat.

COUNTRY "SAUSAGE" PATTIES
I got this recipe from a vegetarian cooking show. Although, it is a vegetarian recipe, it does have that "sausage" flavor to it. We eat it on biscuits in the morning. At dinner time we put a mushroom gravy over it and serve it with mashed potatoes, a vegetable and salad. I think it is a good recipe and my family (who also eat meat) enjoyed it. Makes 10 smaller patties but you can make them bigger. Cooking time does not reflect time for baking if you make them that way - only for time to fry-cook them.

Steps:
- Heat a large non-stick skillet and add 2 tablespoons olive oil (or any oil you like).
- Put the 3 cups water in a large bowl.
- Add soy sauce, garlic powder, onion powder, thyme, sage, poultry seasoning, cayenne pepper and salt.
- Mix well.
- Add grated onion.
- Add oats and pecan meal.
- Mix and stir well, mashing mixture with back of the spoon as you stir and mix.
- Drop by large spoonfuls into a hot skillet in shape of patties.
- Brown well on both sides.
- Eat as sausage patties on a biscuit for breakfast, or put a gravy on them and bake them for 15 minutes in 400 degree fahrenheit oven until hot and bubbly. Serve with mashed potatoes, a vegetable and salad.

- Place half pork in a food processor; pulse until coarsely ground. Place ground pork in large bowl. Repeat procedure with remaining pork. Add water and remaining ingredients. Knead mixture until well blended. Cover and refrigerate 8 hours or overnight.
- Divide mixture into 16 equal portions, shaping each into a 1/2 inch thick patty. Heat large nonstick skillet over med-high. Coat pan with cooking spray. Add half the patties; cook 6 minute Turn patties and cook 3-5 min or til done. Repeat with remaining patties.

- In a large bowl, mix everything together. The best way is to use your hands and really mix it all together. You can also use your stand mixer with the paddle attachment.
- There are a few different ways you can do this. I like to use a large cookie scoop / ice cream scoop. I lightly pack the meat into the scoop, release the scoop, then flatten it with my palm. Alternatively, you can just divide the meat into 12 rough balls, and shape each ball into a sausage patty. Lastly, you can also roll out the meat between parchment paper, then cut the sausages with a round cookie cutter / lip of a cup.
- Heat some oil in a non-stick skillet over medium-high heat. Add the patties (you might need to do it in batches) and cook the first side for about 3-4 minutes, or until browned. Flip then cook the other side until browned and the sausage is cooked through.The most reliable way to to check if a sausage patty is cooked through is to use an instant read thermometer. The internal temperature of each sausage patty should be 160°F / 71°C.
