SLOW COOKER TATER TOT COWBOY CASSEROLE RECIPE
Slow cooker tater tot cowboy casserole is one of our most loved casseroles made in the slow cooker.

Steps:
- Spray bottom of slow cooker with non-stick cooking spray.
- In a large skillet, cook beef and onion over medium heat until beef is no longer pink. Drain grease, then stir in frozen mixed vegetables, soup, 1/2 cup cheese, milk, sour cream, and seasonings.
- Place meat and vegetable mixture in the bottom of the slow cooker. Top with frozen tater tots and shredded cheese.
- Cook, covered, on low heat for 6 hours. Let stand, uncovered, 15 minutes before serving.

Steps:
- Layer onions, ground beef, potatoes, garlic and beans in slow cooker in that order.
- Mix your diced tomatoes& flour in a separate bowl.
- I like to take my immersion blender to it, kids don't like tomato chunks.
- Pour tomato mixture over top of things in pot and sprinkle with salt& pepper.
- Cover& cook on low for 5-6 hours, or until potatoes are done (the thinner the faster).

- Place the potatoes in the bottom of a 3 1/2 quart crock pot and sprinkle corn on top. Add the browned hamburger with onions and peppers on top of the corn along with the kidney beans.
- In a bowl combine both cans of diced tomatoes along with the 1/2 cup water or broth. Stir in the black pepper, salt, garlic, chili powder, Worcestershire sauce and cayenne or hot sauce. Mix well and pour over the contents of the crock pot.
- Cook on high for 4 hours or low for six hours or until potatoes are done. Once the casserole is finished cooking, sprinkle on shredded cheese, put the top on the crock pot and let it melt.
