CRAB QUICHE
My husband loves quiche and he asked me if I could try to make him one. I decided to try a crab quiche, and it was gone in one sitting. You won't be disappointed!

- Preheat the oven to 350 degrees F (175 degrees C). Bake the pie crust for about 10 minutes, until just starting to brown. Remove from the oven, and allow to cool.
- In a large bowl, whisk together the eggs, cream, salt, pepper, and hot sauce. Stir in shredded cheese, onion and imitation crab. Pour into the pie shell.
- Bake for 25 to 30 minutes in the preheated oven, then turn off the oven, but leave the door closed. Leave quiche in the oven for an additional 20 to 30 minutes until firm. This will give it a smoother texture.

- Preheat the oven to 350 degrees F.
- Sprinkle the cheese evenly over the bottom of the pie crust. Top with the crab meat and sprinkle with the scallions. Whisk together the heavy cream, lemon zest, mustard, seafood seasoning, salt, mace and eggs in a bowl. Pour the egg mixture into the pie crust.
- Bake until the custard sets, about 40 minutes. Let stand for 15 minutes before slicing.
WINNING CRAB QUICHE
Crabmeat is very plentiful here in Maryland, and this dish is one of my favorite ways to eat it. My sister-in-law Darlene gave me this recipe, and that simple gesture helped make me feel part of the family.

Immediately sprinkle 1/2 cup cheese over crust., Reduce heat to 375°. In a skillet, saute red pepper and onions in butter until tender. , In a large bowl, whisk the eggs, cream, salt and pepper. - Preheat oven to 350 degrees. Bake pie crust until lightly browned, about 5 - 10 minutes. Remove from oven and set aside.
- Bring a medium pot of water to boil. Place asparagus in boiling water for 30 seconds, remove and immediately place in ice water, drain.
- Melt butter in a medium pan over medium heat. Add garlic, shallots and mushrooms, cook 3 minutes. Let cool.
- In a medium bowl, whisk together half and half, eggs, hot sauce, nutmeg and dill.
- Place pie crust on a baking sheet, Place half of the cheese into pie crust. Add asparagus, mushroom mixture, remaining cheese and crab meat to pie crust.
- Pour egg mixture into pie crust. With a small spoon, carefully stir mixture in pie crust to distribute ingredients.
- Bake until quiche is set and top is golden brown, about 45 minutes. Remove from oven and let cool at least 15 minutes before cutting.
- Serve with soup and fresh fruit, if desired.

I almost always serve this quiche when I have company for lunch because it makes such a pretty presentation, but it's not hard to make. It gets rave reviews from family and friends-almost everyone who tastes it asks for the recipe.

- Place asparagus in a large saucepan with enough water to cover; bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. Drain well and pat dry. - 1 9-inch pie crust 1 cup crab meat 1 3/4 cup milk 3 eggs, beaten 10 asparagus spears, tips reserved 1/2 cup fresh grated Parmesan cheese Pinch each of nutmeg and cayenne pepper salt to taste Preheat oven to 375 degrees. Place crab in bottom of pastry shell. Cut bottom parts of asparagus spears into half-inch slices and scatter over crab. Sprinkle Parmesan over asparagus. Beat eggs and milk together, and season to taste with nutmeg, cayenne and salt. Pour over crab/asparagus mixture. Arrange reserved asparagus tips in a spoke pattern on top. Bake in preheated oven until set, about 45 minutes to an hour. Let sit for about 15 minutes before serving.
ASPARAGUS QUICHE
There's nothing I like better than getting all my housework done and "cooking up a storm" in the kitchen. I was raised in a farming community that had many asparagus growers. So I've always made sure that there's an ample supply of asparagus in my freezer! My husband is a grain farmer, and we have four grown children and 13 grandchildren.

- Bake crust at 425° for 6-7 minutes. Remove from oven and set aside. , Cook the asparagus spears in a small amount of water until tender. Drain and cool. Set aside three spears for garnish; cut the remaining asparagus into 1/2-in. pieces. Combine the asparagus pieces and onions; add flour and toss. Pour into crust; sprinkle with cheese. - For the pastry, sift flour and salt together in a bowl, then rub in butter until mixture resembles breadcrumbs. Whisk egg and oil together in a separate bowl, then add to flour mixture and mix quickly until a soft dough forms. Add a drop or two of ice-cold water to bind if necessary. Wrap loosely in cling film, then press gently to flatten into a disc. Refrigerate for at least 1 hour, or up to 3 days.
- When ready to line a 25cm tart case, remove pastry from fridge and allow to sit for 10 minutes before rolling out on a floured workbench to about 5mm thick. Gently roll up pastry over the rolling pin, transfer to the quiche tin and unfold. Press pastry against the fluted edges of the pan and trim the excess with a small sharp knife. Save the trimmings to patch up any cracks in the baked tart shell. Cover pastry lightly with cling film and refrigerate for at least 1 hour, or up to 1 day.
- Preheat oven to 210C (190C fan-forced) and place an oven tray on middle rack. Remove the pastry case from the fridge and line with two pieces of baking paper, then fill with dried beans or rice. Place on the hot oven tray and bake for 30 minutes, then lift out the baking paper and the beans. Return the pastry to the oven for another 10 minutes or until golden brown. Remove from oven and if there are any cracks, patch while still warm with the reserved raw pastry.
- For the filling, toss asparagus with 1 tbsp olive oil, season with salt and pepper, then place onto an oven tray and roast (at same oven temperature) for 5 to 7 minutes until slightly softened. Meanwhile, sweat onion in a pan over medium heat in remaining 2 tbsp of oil until soft and translucent, then stir in garlic and cook for 1 minute. Transfer in to a medium bowl and add roasted asparagus, crabmeat and chervil. Cool for a few minutes before distributing over pastry shell.
