- In a large bowl, dissolve gelatin in boiling water. Stir in the cranberry sauce, pineapple and orange juice. Pour into a 6-cup ring mold coated with cooking spray., Cover and refrigerate until set, about 4 hours. Unmold onto a serving platter. If desired, garnish with sugared cranberries.

CRAN-RASPBERRY ORANGE JUICE
I created this recipe when I had just a little orange juice and a little cranberry raspberry juice left and decided to add them together. Makes for a very festive looking non-alcoholic beverage.

- In a tall glass add 8 ounces of crushed ice.
- Pour cranberry and raspberry juice over ice and mix well with sugar substitute.
- Then add orange juice. (If you want you can mix everything together but I like the color combo of them unmixed).

- Drain raspberries, reserving juice; add enough water to juice to measure 1-1/2 cups. Pour into a Dutch oven. Add raspberries and cranberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

- 1. Add 1 cup water and 1 cup sugar to medium kettle. Heat to a slow simmer till sugar dissolves completely.
- 2. Slowly add washed cranberries into simmering sugar water. Let simmer for 15 minutes, stirring occasionally.
- 3. Add fresh washed raspberries to cranberries. Continue to simmer for 15 minutes, stirring occasionally.
