A holiday tradition at Cristie Hunt's house in Rossville, Georgia, this fluffy refresher is pretty as a picture and lighter than air. "It makes a great alternative to plain old cranberry sauce," she adds, "and an easy potluck dish for seasonal get-togethers."

- In a large bowl, combine the cranberry sauce, marshmallows, pineapple and lemon juice. Fold in whipped topping. Transfer to a serving dish. Cover and refrigerate until serving.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, stir together the sugar, flour, baking powder and salt. Cut in the butter or margarine until the lumps are no larger than peas. Stir in the egg just a little bit, but allow the mixture to stay somewhat crumbly.
- Sprinkle half of the mixture in an even layer in the bottom of a 9x13 inch pan. Pack down into a solid crust. Spread the cranberry sauce over the crust. Crumble the remaining mixture over the cranberry sauce.
- Bake for 40 minutes in the preheated oven, until the top is golden brown. Cool before slicing into bars.

- Line a 9x9 casserole dish with non stick foil or parchment paper. Trust me, it makes removing from pan and slicing easier. In a small bowl, combine graham crackers and butter. Mixture does not need to be super buttery, crumbly is fine. Press mixture into bottom of casserole dish. Reserve 1/2 cup to sprinkle on top. Set aside. Whip up whipping cream with vanilla until stiff peaks, set aside. DO NOT ADD EXTRA SUGAR. In a large non-stick sauce pan, add marshmallows and milk and melt down until smooth stirring regularly. Once marshmallows are melted and smooth, remove from heat let cool for 5 - 10 minutes, stirring regularly. Once cooled fold in pureed strawberries. Mix well. Add whipped cream to strawberry marshmallow mixture. Pour marshmallow mixture into graham cracker crust. Top with reserved graham cracker mixture. Refrigerate for 2 hours or until set. Slice and serve.

I had this at a friend. party and loved it. Not a huge fan of cranberries; but fresh cranberries with the almond extract could almost be mistaken for cherries. I made it several times through the Holidays and it was a huge hit. GREAT for breakfast or tea.any time of the year. Buy fresh cranberries when in season and freeze for cooking throughout the year.

- Preheat oven to 350 degrees Fahrenheit
- Grease and flour an 8 " square cake pan and put aside
- In a large saucepan melt marshmallows with 1 cup of milk and set aside to cool.
- In a measuring cup put the flour and Baking Powder together and combine well
- In a small mixing bowl lightly beat eggs and then add to cooled marshmallow mixture along with dry ingredients and stir until thoroughly mixed together
- Cut cranberries in half and add to the creamed mixture and then pour into prepared baking pan
- Set in oven for 30 to 35 minutes or until lightly browned.
