Steps:

  • Using a food processor, pulse the cranberries and oranges. Transfer the chopped fruit to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary. Add the chopped pecans and serve.

  • Slice the orange into eighths; finely chop in a food processor. Add cranberries and process until chopped. Slice apple into eighths; add to orange mixture and process until chopped. In a large bowl, dissolve gelatin in boiling water; stir in pineapple and orange mixture. Chill for at least 4 hours. Just before serving, stir in nuts.

Steps:

  • Make this a day ahead and serve chilled. In a non-reactive saucepan, combine the water, orange juice and sugar. Bring to a boil, stirring continuously. Add the cranberries and cook only for about minutes or until the skins of the berries pop. Remove pan from heat and add orange rind. Transfer mixture to a bowl and let cool to room temperature.
  • Leftovers can be thinned with some liqueur and used as a hot sauce to spoon over frozen yogurt or pound cake.

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.

Grandma's Cranberry-Orange Gelatin Salad image

Steps:

  • Place the gelatin into a bowl, pour in the boiling water, and stir until the gelatin dissolves. Mix in the cranberry sauce, pineapple, celery, pecans, and orange zest until evenly blended. Pour the gelatin mixture into a mold or serving dish.
  • Chill in the refrigerator overnight, or up to 8 hours.
  • To make the topping, beat the cream cheese with half of the whipped topping. Fold in the remaining whipped topping until well blended. Unmold the gelatin, and spread with the topping mixture.

Steps:

  • 1. Dissolve sugar in water and bring to boil in large pot. Add cranberies. Return to boil. Reduce heat and boil gently for 10 minutes, stirring occasionally until cranberries pop. Remove from heat. Stir in gelatin until completely dissolved. Cool completely. Add remaining ingredients. Refrigerate 24 hours.
  • 2. Note: I sometimes add fresh orange sections that has been peeled, white removed, and chopped in the blender. This year I used my hand stick blender and crushed some of the cranberries slightly. It worked well if you like a little less bulk in the salad.

Steps:

  • In a small saucepan, sprinkle gelatin over 1 cup cranberry juice. Set aside to soften, 5 minutes. Place over low heat until gelatin has dissolved, 4 to 5 minutes. Add sugar; stir gently until dissolved (rub mixture between your fingers to make sure it's smooth), 2 to 3 minutes. Remove from heat.
  • Transfer gelatin mixture to a medium bowl; stir in orange juice and remaining 2 cups cranberry juice. Skim any foam from surface, and refrigerate until just thick enough to hold a line drawn by your finger, 30 to 40 minutes.
  • Arrange orange segments in the bottom of a 1 1/2- to 2-quart gelatin mold or Bundt pan; pour gelatin mixture over oranges. Refrigerate until firm, at least 2 hours.
  • To unmold, dip bottom of mold briefly in hot water, invert onto a plate, and shake firmly to release.

Steps:

  • Put boiling water into blender, add lemon gelatin and blend 20 seconds.
  • Add orange, cranberries, sugar, salt and blend again until ingredients are finely chopped.
  • Add in pecans and pulse until coarsely chopped.
  • Pour into mold and place in refrigerator until set.
  • Note: This recipe has been our family for decades, and the last time my mother tried to make it, it didn't set. Prevailing opinion at the time was that perhaps she bought the wrong size of gelatin or that the formula of the gelatin had changed. At any rate, I copied this from a tattered recipe card that didn't specify size of box. It might be more firm if you also add in some unflavored gelatin in step 1. Good luck! Next time I try this I will modify the recipe, but if you do, by all means, comment away!

  • Before I begin, I refrigerate the celery, oranges and apples; and freeze the cranberries. Having all the produce cold will help the gelatin set up quickly.
  • Choose any red gelatin - raspberry, cherry, black cherry, etc. Bring 1 cup water to boil and dissolve gelatin in large bowl. Add 4-5 ice cubes and allow to cool.
  • While gelatin is cooling, chop, grate or grind produce. I use a meat grinder to run all the produce through; however a grater can be used or even a food processor.
  • I begin with the oranges - which produces mostly juice and will keep the apples from discoloring. Grind, chop or juice your oranges into a large bowl; next run the celery through, then apples and finally cranberries.
  • If you really like cranberries use a whole bag, if it is not a real favorite, use less.
  • Sprinkle the package of unflavored gelatin and sweetener (Splenda or other) over the chopped up produce and stir to dissolve.
  • Optional: Add chopped nuts, pecans, walnuts, hazelnuts and stir. Pour all the produce into the cooling gelatin, stir to taste and see if it is sweet enough for your taste, or if it is too sweet grind a few more cranberries inches.
  • When you are satisfied, pour into covered container and refrigerate until fully set.

  • 1. For the Cranberry Orange Relish:
  • 2. Put cranberries and oranges in food processor and pulse until finely chopped. (A food grinder can be used instead of the food processor)
