CREAMY HAM AND CHEESE QUICHE
This quiche is creamy, simple, and delicious!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Press pie pasty into the bottom of a 9-inch pie plate.
- Bake pie crust in preheated oven for 5 minutes, use a fork to poke holes into the crust, and continue cooking until lightly browned, about 5 minutes more.
- Reduce oven heat to 350 degrees F (175 degrees C).
- Mix 1/2 cup Cheddar cheese, Swiss cheese, and 1 tablespoon flour in a bowl; spread over the warm pie crust.
- Stir ham and honey mustard together in a bowl to coat the ham completely; spoon over the cheese mixture.
- Mix half-and-half, eggs, green onions, 1 tablespoon flour, and salt together in bowl. Pour mixture carefully over the ham layer; top with remaining Cheddar cheese.
- Bake in preheated oven until set in the center, 40 to 50 minutes. Cool for 10 minutes before cutting.

We had this at a morning meeting, and it's quite tasty! Feel free to substitute or add ingredients (i.e., bacon, swiss cheese, spinach, etc ).

Steps:
- On a lightly-floured surface, roll pastry to a 12" circle. Place in 10" pie plate.
- Turn under edge and flute. Prick bottom and sides of pastry with fork and bake at 400 for 12 to 15 minutes or until pastry is lightly browned.
- Combine cream cheese and milk in saucepan. Stir over low heat until smooth.
- Gradually add cream cheese mixture to eggs, mixing until well blended.
- Saute onions in butter.
- Add onions and remaining ingredients to cream cheese mixture and mix well.
- Pour into pastry shell and bake at 350 for 35 to 40 minutes or until set.
- Garnish with ham slices and fresh dill, if desired.

- Saute onion in butter until transparent.
- Cover the bottom of the pie crust with the cream cheese, cut into small pieces.

- Mix the flour and butter together thoroughly until it turns into a dough, then rub the dough with your hands until it resembles breadcrumbs. Add the egg yolk and 2 tablespoons of cold water and the process it with an electric hand mixer until the dough comes back together again, in a smooth ball. wrap the dough in clingfilm and chill it in a fridge for 30 minutes.
- Heat the oven to 170°C.
- Roll out the pastry dough on a lightly floured work surface, then use it to line a pastry pan that fits your dough in. Roll the rolling pin over the edges of pan to cut any excess pastry from the edges. Chill for 30 minutes in the fridge.
- Spread the soft cheese evenly at the bottom of the pastry. Beat the egg, milk and salt until smooth and fully blended. Pour it over the cheese in the pastry case.
- Bake it in the centre of the oven until the centre of the quiche is almost set but jiggles slightly when the dish is gently shaken and when a knife is inserted near the centre of the quiche, it comes out clean. Let the quiche stand for 5 minutes to cool down, then cut into slices. Sit Back, Relax, and Enjoy!

- In a large bowl, add the eggs, heavy whipping cream, salt, and pepper.
- Heat 1/2 stick butter to liquefy, let cool, and add to bowl.
- Dice the onion and add to a pan with broccoli, bacon and the remaining butter.
- Saute the broccoli, onion and bacon in the butter over medium heat for 5-10 minutes or until onions are soft.
- Spray a 9" glass pie pan with non-stick spray, pour broccoli/onion/bacon mixture into pan
- Whip the contents of the first bowl for 3 minutes .
- divide cream cheese into 1/4 inch pieces and place evenly over broccoli/onion/bacon mixture.
- Pour whipped egg mixture over cream cheese. Do not mix.

- Preheat oven to 425°; prick the crust all over with a fork.
- Line it with tin foil and weight the bottom with a pile of dried beans, rice, or other weights that will sit flat on the surface.

SEAFOOD CREAM CHEESE QUICHE
This is a very delicious seafood quiche, I have made this quite often for a luncheons, everyone just loves it. This recipe make 2, 8-inch pies, just divide all ingredients evenly between the two pie shells. If my memory serves me right, I believe the original recipe called for one large deep-dish, 10-inch pie plate, but I prefer to make it into two, 8-inch pies.

- Set oven to 425F degrees.
- In a saute pan, melt the butter, and saute the onion and the celery, until soft.
- Add in the shrimp, cook until the shrimp are pink in colour; set aside.
- Divide the cream cheese in half, and cut the cream cheese into 1/4 inch pieces; sprinkle evenly into the bottom of the two pie crusts.
- Top with the sauteed shrimp/onion mixture.
- Top with the grated Swiss cheese.
- Mix together the milk and eggs; divide evenly between the two pie crusts.
- Bake for 10 minutes at 425F degrees.
