This is an absolutely divine spin on standard mashed potatoes. Everyone who has tried them has asked me for the recipe. Makes a great addition to any type of meat main dish, and works well for leftovers.

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 25 minutes. Drain and mash.
  • In a large bowl beat the cream cheese and dressing mix until smooth. Stir in mashed potatoes, sour cream and butter; beat until desired consistency is reached.

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-20 minutes. Quick Ranch Potatoes image

Steps:

  • Peel and cut the potatoes into 2-inch chunks. Put them into an Instant Pot® along with 3/4 cup water and 1 teaspoon salt.
  • Lock the lid and set the lever to seal. Press "manual" and set for 10 minutes. When done, manually release the steam.
  • Remove the lid, leaving the pot in "keep warm" mode. Start mashing the potatoes. Add the butter, cream cheese, milk and ranch powder. Mash again until the potatoes are smooth. Taste and adjust the seasoning with salt, pepper or more ranch. Thin with more milk if needed. Serve hot garnished with chopped chives. The potatoes will keep warm in the pot for up to 30 minutes.

Steps:

  • Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
  • Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
  • Combine cream cheese and sour cream in a large bowl; beat until smooth.
  • Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
  • When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
  • Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
  • Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
  • Bake 5 minutes longer, or until cheese melts.
