CREAM CHEESE ROTEL DIP
This is the best and easiest dip EVER!! I take this dip to parties all the time. EASY EASY EASY...and it follows my simple rule of recipes...."Does it have cream cheese in it?" Yes....okay...this has to be a good recipe!! Haha! :)

Steps:
- Cut blocks of cream cheese into cubes and put in small crock pot.
- Pour can of rotel (do not drain) over cream cheese.
- Set crock pot to low and heat through. Stir often, it will burn. Once the cream cheese is really soft stir well. I use a whisk or hand blender to get the ingredients to combine better. You don't want it to be lumpy.
- This dip will stay in the crockpot for just a couple of hours before it will start to burn and just turn gross. Make sure you turn the crockpot off after about 2 hours.
- Serve with Tortilla Chips! Enjoy! :).

- Take the cream cheese out of the fridge about an hour or so prior to starting the recipe or microwave it for 20-30 seconds so it becomes nice and soft.
- Add all ingredients except for the corn and scallions to a skillet or large saucepan over medium heat. Cook for a few minutes, stirring it until the cream cheese has melted into a nice sauce.
- Add the corn and scallions and cook for another 5-7 minutes, or until it's heated through (stir it often and turn the heat down if it starts to bubble too much and dry out). If you want to thin it out a bit, add a splash of chicken broth. Taste and season with salt & pepper as needed.
- Serve hot or chill first. Can be eaten as a dip (hot or cold) or as even as a hot side dish like you would serve creamed corn.
