Simple Cream of Broccoli Soup image

Steps:

  • In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream. Season to taste and serve warm.

2 tablespoons butter
1/2 cup cream, heavy, light or half-n-half
1 onion, chopped
1 russet potato, peeled and chop
Nutmeg, to taste
6 cups canned chicken stock, warmed
Salt
3 cups chopped broccoli florets and stems
Pepper

Cream of Broccoli Soup with Roasted Garlic Crostini image

Steps:

  • Preheat oven to 400 degrees F.
  • Arrange bread slices on a baking sheet. Bake for 6 minutes, until toasted.
  • Meanwhile, in a large stock pot, heat olive oil over medium heat. Add onion, celery, garlic, carrot, and broccoli. Pour broth over vegetables and increase the heat to high. Bring to a boil, reduce heat to medium and simmer 5 minutes. Using an immersion blender, puree until smooth or you can use a blender. Add milk and simmer 1 minute to heat through. Puree again. Season, to taste, with salt and pepper. Using a fork, mash garlic cloves with a pinch each of salt and black pepper, making a thick paste. Spread mixture on toasted bread and serve with soup.

1 French baguette, cut crosswise into 1/2-inch thick slices

Steps:

  • In a medium pot, melt butter over medium. Add onion and cook, stirring occasionally, until softened, 8 minutes.
  • Add flour and cook, stirring, until combined, 1 minute.
  • Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes.
  • Add broccoli and bring to a simmer. Cook until broccoli is very tender, 20 minutes.
  • Transfer mixture to a large bowl. In batches, fill a blender halfway with mixture and puree until smooth; to allow heat to escape, remove cap from hole in lid, cover lid with a dish towel, and hold down firmly while blending. Return soup to pot as pureed.
  • Add cream and heat over medium until warmed through. Season with salt and pepper. Thin with broth or water, if desired.

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
  • In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

Steps:

  • 1. Set oven to Roast @ 375 degrees. Toss broccoli flowerettes with 1/4 cup olive oil in roasting pan and roast for 6-10 minutes, tossing 1/2 through until bright green tender crisp and browned on edges. Pull from oven and set aside. 2. In 4 qt. pot, saute onions in 1/4 cup olive oil over medium high heat until caramelized. Add shredded carrots and continue to sauté for another 2 minutes, then add celery seed and sauté 1 minute more. Add the roasted broccoli and sauté 4 more minutes. 3. Deglaze the pan with the white wine. Then add vegetable broth and bring to a boil. 4. Add cream while whisking and bring to boil again. Season with salt & pepper as desired, or try sea salt and paprika. 5. Remove from heat. Use a hand held blender to liquify the soup and serve hot. May be prepared up to 24 hours ahead, chilled, and then reheated - often this prep ahead results in a thicker more flavorful soup. When serving add shredded cheese of your choice such as an Italian blend.

Roasted Broccoli-Cheese Soup image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with a silicone mat.
  • Toss broccoli and olive oil together in a bowl. Transfer to the prepared baking pan. Sprinkle 1/2 of the minced garlic over top.
  • Roast in the oven until broccoli is tender, 15 to 20 minutes, tossing occasionally.
  • Meanwhile, combine remaining garlic and onions in a food processor; pulse until onion is chopped. Change to the shredding disc and grate carrots into the bowl.
  • Melt 1 tablespoon butter in a medium skillet over medium heat. Add onion-carrot mixture to the skillet and saute until tender, 5 to 7 minutes. Remove to a plate.
  • Add remaining 4 tablespoons butter to the same skillet. When melted, slowly stir in flour. Slowly stir in half-and-half, then stir in chicken broth. Simmer until thickened, 10 to 15 minutes.
  • Slowly drop in Cheddar cheese; add cooked vegetables and roasted broccoli; simmer for 5 minutes.
