- Cut the avocado in half, lengthways and remove the stone. Scoop out the soft flesh with a teaspoon, put it into a small basin, and mash to a soft cream. Season with the salt and pepper.
- Toast the bread on both sides, spread one side with butter, then spread the avocado cream thickly on the top. Eat while the toast is hot.
CREAMED EGGS ON TOAST
This is a great recipe at any time, but esp. can help use up hard boiled eggs after Easter. I used to request my mom to make this recipe anytime I came home from college and even when I was older and went home to visit for awhile. Now my son starts begging for it whenever we get close to Easter, or any other time he thinks he can get me to hardboil some eggs. The passive cooking time is to hardboil the eggs - that can be done the night before.

Steps:
- To hardboil eggs, simmer on low (barely boiling) for about 20 min.
- ,or bring to a boil, cover, turn off heat and let sit for about 20 min.
- Cool (run cold water over cooked eggs), peel, then chop the eggs.
- Melt the butter.
- Stir in the flour and 1/4t salt.
- Stir in milk a little at a time and continue to cook until the sauce is thick.
- Pour over chopped up eggs which you salt and pepper to taste.
- Sprinkle the mixture with paprika.
- Spoon over slice of toast.
CREAMED EGGS OVER TOAST
My mama used to make this for us for breakfast and dinner and I still love it today. You can adjust the recipe to your taste by adding more bacon or less onion, it is up to you.

- Put the eggs in cold water with salt in a pan and boil approximately 15 minutes. Drain and put ice water in the pan so the eggs will be easier to peel.
- Peel the eggs and set aside.
- Fry the bacon until crispy and remove from the pan. Drain on paper towels.
- Add the chopped onion to the bacon grease and saute until transparent.
- Crumble the bacon and chop the eggs and add to the skillet with the onion.
- Add flour and stir until flour has browned a little bit.
- Add the milk and cook on medium until it thickens like gravy. You may need to add some water if it gets too thick. If it is too thin, make a thickening with 1 T. flour and a little bit of water and pour in to gravy and let thicken. Add the salt and pepper to taste.
- You can either put this over toast or biscuits but we always just used toast.
- Enjoy!

CREAMY GARLIC SHRIMP TOAST
Sweet, butterflied shrimp in a garlicky cream sauce with a smoky paprika flavor are served over thick slices of buttery, pan-toasted French bread in this simple recipe for two! This sauce would be good over pasta, rice, or potatoes, but I think enjoying it like this is the best way to go.

- Butterfly shrimp and place in a mixing bowl. Add cayenne, paprika, and garlic and stir until shrimp are evenly coated. Refrigerate until needed.
- Trim most of the crusts off of the bread.
- Add 4 tablespoons melted butter to a skillet over medium heat. Add both slices of bread and toast until golden brown, 3 to 4 minutes per side. Remove bread to a plate and wipe out any crumbs.
- Add remaining melted butter to the skillet and increase heat to high. When the pan is very hot and you see the first wisp of smoke, add shrimp and use tongs to spread into an even layer. Sear, without stirring or tossing, for 1 minute.
- Sprinkle with lemon zest and add lemon juice and cream. Stir with a spoon to scrape any browned bits off the bottom. Let cream boil and reduce for 1 ½ to 2 minutes as the shrimp finishes cooking and the sauce thickens up.
- Turn off the heat and stir in parsley. Taste and add salt if needed.
- Divide shrimp and sauce evenly over each piece of toasted bread.

- In a saucepan, over low-medium heat, melt/combine unsalted butter and olive oil; then whisk in whole wheat pastry flour.
- Slowly add nonfat milk, whisking constantly to avoid lumps--and continue to cook and whisk until sauce is smooth and thickened.
- Stir in chopped hard-boiled eggs, curry powder, salt, and freshly ground black pepper, and cook until thoroughly warmed; then remove from heat and cover.
- Toast whole wheat bread, top with curried egg mixture, and serve.

- Grease a 9×13 pan with butter or spray with nonstick spray. Slice then cut the bread into cubes, about 1 inch in size. Spread half of the cubes into the prepared baking pan. Using a handheld or stand mixer fitted with a whisk attachment, beat the room temperature (not cold!) cream cheese on medium-high speed until completely smooth. Beat in the confectioners’ sugar and 1/4 teaspoon vanilla extract until combined. Drop random spoonfuls of cream cheese mixture on top of the bread. Layer the remaining bread cubes on top of cream cheese. Set aside.
- Whisk the eggs, milk, cinnamon, brown sugar, and remaining vanilla together until no brown sugar lumps remain. Pour over the bread. Cover the pan tightly with plastic wrap and stick in the refrigerator for 3 hours – overnight. Overnight is best.
- Whisk the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cold cubed butter with a pastry blender or two forks. Sprinkle the topping over the soaked bread.
