BASIC CREPES

Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

Basic Crepes image

Steps:

  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Quiche Lorraine Cups image

Steps:

  • Lightly grease a 12 muffin pan or 12 custard cups.
  • Line each with a crepe, fluting them.
  • Sprinkle bacon into the crepes.
  • Divide the cheese between the crepes.
  • Mix together the flour, salt.
  • Mix the beaten eggs and milk, add to the flour.
  • Blend well and pour into the crepes on top of the cheese.
  • Bake in 350F oven for 15-20 minutes or until firm.
  • Cool 5 minutes before removing from pan.

12 cooked crepes (, see All Purpose Dinner Crepes Batter)
4 slices bacon, cooked crisp &,crumbled
1 cup swiss cheese, grated
2 tablespoons flour
1/4 teaspoon salt
2 eggs
1 cup milk

DELICE LORRAINE (CREPES WITH CHEESE & HAM FILLING)

I first saw this made on TV in New Zealand by Chef Des Britten in 1974, and have made it on & off over the years as an easy entree or lunch dish. You can also use asparagus in season or leftover chicken or even canned salmon in place of the ham. This is a great do ahead dish as they only need to be grilled/broiled just before you want to serve them.

Delice Lorraine (Crepes With Cheese & Ham Filling) image

Steps:

  • Lay crepes out flat and top each one with the thinly sliced ham.
  • Top each one with 3-4 Tbsp grated cheese.
  • Roll up each crepe so that they resemble a big fat cigar.
  • Place in a baking dish that will hold them in one layer.
  • Top each crepe with another 3-4 Tbsp grated cheese.
  • Finally pour a tablespoon cream over each one.
  • This can all be done in advance.
  • Just before serving time, have your grill/ broiler really hot and place dish underneath until the cheese on top has melted and browned.
  • Serve at once sprinkled with chopped parsley.

  • For the crepes, mix together the flour, milk, eggs, oil and salt, and whisk well. Heat a lightly greased (with the butter) 6" crepe pan. Remove from heat and spoon about 2 Tbsp. of batter into the pan while lifting and tilting the skillet to spread evenly. Return to heat and brown one side only. To remove invert pan onto a plate. Butter the pan in between crepes with a scant amount of butter. Makes approx. 14 crepes.
  • For the filling combine the bacon, onion, egg and 1 1/2 cups of the cheese. Add the sour cream, pepper and nutmeg. Mix well. Spread about 2 Tbsp. of this mixture on one side of each of the crepes and fold into a triangle. Place in a buttered baking dish; sprinkle the remaining cheese over the crepes and bake for 12 min. at 350F. Sprinkle with parsley and serve immediately. The crepes can be made up to a day ahead of time and refrigerated. Heat for 20 min. Also freezes well, thaw and heat.
