CRESCENT BREAKFAST CUPS

We loved the mix of flavors and ingredients in this crescent breakfast cup recipe... A terrific finger food for breakfast or brunch!

Crescent Breakfast Cups image

Steps:

  • 1. Spray a mini muffin tin with cooking spray. Mine has 24 cups.
  • 2. Open crescent dough and pull off enough to fit in the tin. Press up sides to form a cup of dough in each. In a small dish mix melted butter and garlic powder. Lightly brush this inside the crescent cups.
  • 3. In a bowl, beat eggs with cream, salt, pepper, and cheese.
  • 4. Sprinkle bacon in the bottom of each cup.
  • 5. Spoon about 1 tablespoon of egg mixture into each cup.
  • 6. Bake for 10-12 minutes on 375. Then enjoy!

1 pkg refrigerated crescent rolls
3 eggs
2 Tbsp cream, half n half or milk
5 slice cooked bacon, crumbled
1/2 c shredded cheddar cheese (or Monterey Jack)
1/4 tsp salt
1/8 tsp black pepper
cooking spray
2 Tbsp melted butter
1/2 tsp garlic powder

This breakfast pocket is easy to make, and the filling can be adjusted however you want - think sausage and egg whites with Gouda, or bacon, eggs and cheese, etc..

Air Fryer Crescent Breakfast Pockets image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Unroll crescent dough and separate into triangles. Slice sausage into coin-sized pieces.
  • Melt butter in a large skillet over medium-high heat. Add eggs and sausage pieces and season with salt and pepper. Cook, stirring, until cooked through, about 2 minutes.
  • Place about 2 tablespoons of filling onto 8 of the crescent triangles. Place remaining crescents on top of filling. Pinch to seal triangle pockets.
  • Cook in the air fryer until golden brown, about 5 minutes. Serve immediately.

  • Heat oven to 375°F. Generously spray bottoms and sides of 24 light-colored nonstick mini muffin cups with cooking spray. Remove crescent dough sheet from can, and leave rolled up. With sharp knife, cut dough roll crosswise into 8 equal rounds. Unroll each crescent round into 13-inch strip; cut into thirds, forming 24 strips of dough.
  • Place one piece of bacon on 1 dough strip; top with potato nugget, and roll up, stretching dough and pinching ends to seal. Place in mini muffin cup, spiral side up. Repeat with remaining crescent strips, bacon and potato nuggets.
  • In medium bowl, beat eggs, salt and pepper until well blended. Carefully spoon generous tablespoon egg mixture around each dough-wrapped potato nugget.
  • Bake 15 to 20 minutes or until golden brown on top and egg mixture is set. Loosen sides, and remove from muffin cups to serving platter. Garnish with parsley. Serve warm.
