CHOCOLATE RIBBON BARS
No one will be able to eat just one of Gail Wiese's yummy Chocolate Ribbon Bars, full of butterscotch, peanut butter and chocolate flavor. Unlike similar crispy cereal treats, these aren't sticky! "Over the years I've accumulated quite a few recipes from my co-workers, and this one is easy to prepare," writes Gail from her home in Athens, Wisconsin.

- In a large microwave-safe bowl, melt butterscotch chips and peanut butter; stir until smooth. Gradually stir in cereal until well coated. Press half of the mixture into a greased 13-in. x 9-in. pan; set remaining mixture aside., In another large microwave-safe bowl, melt semisweet chocolate chips and butter. Stir in water until blended. Gradually add the confectioners' sugar, stirring until smooth., Spread over cereal layer. Cover and refrigerate for 10 minutes or until chocolate layer is set. Spread remaining cereal mixture over the top. Chill before cutting. ,

This is what I grew up with in lieu of 'scotcheroos'. They are simpler to make and pack a much richer flavor which means when I bite into similar recipes (hoping for this flavor), I am disappointed and want my homemade version!

Steps:
- Grease bottom and the lower 1 inch of the sides of a 9x13-inch baking dish with butter. Pour cereal into the prepared dish.
- Mix butterscotch chips and peanut butter together in a bowl and melt in a microwave oven, stirring every 30 seconds, until smooth, 2 to 3 minutes; pour over cereal and stir until cereal is coated. Use a spatula or the back of a spoon to compact mixture into the dish.
- Cover the baking dish with plastic wrap and refrigerate until firm, about 10 minutes.
- Melt the chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Spread over the top of the bars with a spatula.
- Refrigerate bars again until the chocolate is firmed, about 10 minutes.

- In a microwave-safe bowl, combine the milk, chips and marshmallows. Microwave, uncovered, at 80% power for 3 minutes or until chips and marshmallows are melted, stirring frequently. Stir in peanut butter and vanilla until combined. Fold in the peanuts., Pour into an 11x7-in. pan coated with cooking spray. Cover and refrigerate for 2 hours or until firm. Cut into squares. Store in the refrigerator.

CRISPY PEANUT BUTTERSCOTCH FUDGE SQUARES
Different twist on regular fudge. We love butterscotch at my house and these were a hit!

- 1. FOR CRUST: Coat a 13 x 9-inch baking pan and rubber spatula with nonstick cooking spray.
- 2. Melt margarine over low heat in medium, heavy-duty saucepan. Add marshmallows and peanut butter; stir until melted. Remove from heat. Add cereal; stir until coated. Press onto bottom of prepared baking using prepared rubber spatula.
- 3. FOR FUDGE: Combine margarine, evaporated milk, sugar and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
- 4. Add marshmallows, morsels, peanut butter and vanilla extract; stir vigorously for 1 minute or until marshmallows and morsels are completely melted. Pour over crust. Sprinkle nuts over fudge if desired; press in slightly. Refrigerate until set. Cut into squares.
PEANUT BUTTER CREAM PIE WITH CHOCOLATE CRISPY CRUST
This is the absolute best peanut butter cream pie i have ever tasted. Originally from Mrs. Field's cookbook. The crust is so unique and works awesome with this pie.

- Make the crust: Use a double boiler to melt the 6 oz. of chocolate and butter over low heat.
- Remove from heat and stir until smooth.
- Gently fold in the rice cereal until it's completely coated. Then set it to the side until it cools to just warm and then stir in the mini chips.
- Press into a buttered 9 inch pie pan and chill for 30 minutes to set the chocolate.
- Prepare the filling: In a large bowl beat the cream cheese until fluffy. Beat in the condensed milk, peanut butter, and vanilla.
- In a medium bowl, beat the heavy cream until soft peaks form. Fold whipped cream into the peanut butter mixture.
- Pour into the pie crust.
- Make the topping: Use a double boiler to melt the milk chocolate over hot, not simmering water.
- Add the cream and stir until blended and smooth.
- Set aside to cool slightly, then drizzle the chocolate over the top of the pie.
- Refrigerate about 2 hours to set.

- For crust:.
- Grease a 13 x 9-inch OR a 11 x 7-inch baking pan and a rubber spatula with non-stick cooking spray.
- Melt the butter over low heat in a medium heavy duty saucepan.
- Add in the marshmallows and peanut butter; stir until melted.
- Add in the rice cereal; stir until coated.
- Press into bottom of a prepared baking pan, using a greased rubber spatula (or greased fingers if desired); set aside.
- For butterscotch layer:.

- Remove from heat.
- Stir in the marshmallows, butterscotch chips, peanut butter and vanilla; stir vigorously for 1 minute until the marshmallows and the baking chips are melted and the mixture is smooth.
- Pour over the rice cereal crust in the baking pan.
- Sprinkle with chopped peanuts.
- Refrigerate until set.
- Cut into squares.
