CRISPY SALT AND PEPPER FRENCH TOAST
I got this savory french toast recipe from food52.com, I haven't tried it yet but it looks amazing and plan to make it for a rare "breakfast for dinner" night tomorrow night. * Better to use a country or pullman loaf for this. You want it to stand up to the egg batter and not get mushy, use or look for a day-old loaf if possible

Steps:
- In a bowl or baking dish, beat together eggs with half-and-half, salt, pepper, green onions, and cilantro.
- Heat a medium or large skillet over medium-high heat.
- Cover the bottom of the skillet with vegetable oil and add a tablespoon or two of butter for taste.
- Dip the bread triangles into the egg batter, drain off any excess, and place straight into the hot pan.
- Fry for 2 to 3 minutes on each side - you want to develop a golden-brown color and the texture should be crispier than traditional French toast.
- Place cooked toasts on a paper towel-lined plate or rack to drain.
- In a small bowl, mix together ketchup and hot sauce to your desired heat tolerance.
- Serve toasts warm with a side of the spicy ketchup.

STEAK SANDWICHES WITH CRISPY ONIONS

- Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat. Refrigerate at least 4 hours or overnight., In a small bowl, combine cilantro, parsley, garlic, 1/2 teaspoon salt and pepper. Remove 2 tablespoons herb mixture; stir into mayonnaise. Refrigerate until serving. Stir 1/2 cup olive oil into remaining herb mixture. Reserve 2 tablespoons oil mixture for serving. Place remaining oil mixture in a large bowl or shallow dish. Add beef; turn to coat. Refrigerate at least 4 hours or overnight., Drain beef, discarding marinade. Grill beef, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness, 7-9 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain onion rings, discarding marinade. In a shallow dish, combine flour, taco seasoning and remaining 2 teaspoons salt. Roll onion rings in flour mixture. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels; keep warm., Remove steak to a cutting board; brush with reserved 2 tablespoons oil mixture. Brush bread with remaining 3 tablespoons olive oil. Grill bread over medium heat until toasted, 30-60 seconds on each side., Spread mayonnaise mixture over 1 side of each toast. Thinly slice steak. Top 6 slices of toast with steak, fried onions and, if desired, arugula and tomato slices. Top with remaining toast.

- Combine broth and butter for coulis in a saucepan over medium heat. Add red pepper and season with salt and pepper; simmer for 10 minutes. Remove from the heat and allow to cool slightly, about 5 minutes.
- Meanwhile, whisk eggs and milk together in a large bowl. Add bread slices and soak until all liquids are uniformly absorbed.
- Pour cooled broth mixture into a food processor. Puree until coulis is smooth.
- Melt 1 teaspoon butter on a griddle over medium heat. Pan-fry French toast slices until golden brown, 2 to 3 minutes per side. Cut each piece into triangles and divide evenly among 2 plates.
- Sprinkle with goat cheese, tomatoes, parsley, and basil. Drizzle with coulis. Serve immediately with remaining coulis on the side.
