HERBED SLOW-COOKER CHICKEN
I use my slow cooker to prepare these well-seasoned chicken breasts that cook up moist and tender. My daughter, who has two young sons to keep up with, shared this great recipe with me several years ago. - In a small bowl, combine the first 7 ingredients and, if desired, browning sauce; rub over chicken. Place in a 5-qt. slow cooker; add broth. Cover and cook on low until chicken is tender, 4-5 hours.

CROCK POT HERBED CHICKEN WITH SWEET POTATOES
Adapted from Betty Crocker's "Slow Cooker Cookbook". Add a green vegetable towards the end of the cooking time and this really is a complete meal! In the original recipe, a cup of thawed green beans is added in the last twenty minutes. Not being overly fond of beans, when I've made this recipe, I've added broccoli florets in the last hour of cooking or baby spinach leaves in the last 10 minutes. Regardless of whether the soup I've used has herbs in it, I usually sprinkle oregano or mixed Italian herbs on the chicken.

Steps:
- Place the chicken pieces in a 5- or 6- quart crock pot, season to taste, spoon the soup over the chicken and top with the sweet potatoes.
- Combine the stuffing mix with the water and butter and spoon it over the sweet potatoes.
- Cover and cook on low for 4 to 6 hours, or until the sweet potatoes are tender, and the chicken is cooked right through: when the juice of the chicken - when the thickest pieces are pierced - is no longer pink.
- Towards the end of the cooking time, add your choice of green vegetable(s).

Steps:
- Remove skin from chicken; set aside.
- Place sweet potato and onion in a 4-1/2 to 6 quart slow cooker.
- Place chicken on top of vegetables.
- In a small bowl stir together salad dressing and rosemary. Pour over chicken.
- Cover and cook on low-heat setting for 7 to 9 hours or on high-heat setting for 3-1/2 to 4-1/2 hours.
- Using a slotted spoon, transfer chicken and vegetables to a serving platter.
- Whisk cooking liquid until smooth; serve with chicken and vegetables.

- Cut any potatoes that are larger than a ping pong ball into quarters; if smaller than a ping pong ball, cut in half. You want the pieces to be a rough 1-inch dice. Lay them in a 6-quart or larger slow cooker.
- Stir the carrots into the slow cooker with the potatoes, then spread them into an even layer. Arrange the chicken in the center, placing it on top of the vegetables.
- In a small saucepan, melt the butter over medium-low heat. Remove from the heat and stir in the garlic, lemon juice and zest, Italian seasoning, salt, and pepper. Pour the mixture over the top of the chicken and vegetables.
- Cover the slow cooker. Cook on HIGH for 1 1/2 to 2 hours or low for 4 to 5 hours. (The total amount of time you need will vary based upon your slow cooker model and the size of your chicken breasts. If your slow cooker runs hot—mine often does—check early to avoid drying out the meat). The chicken is done when it reaches 165 degrees F at the center with an instant read thermometer. The moment the chicken is done cooking, remove it to a plate, and cover to keep warm. Test the vegetables to see if they are tender. If they are not yet tender, give them a stir, recover the slow cooker, then continue cooking until they are tender and pierce easily with a fork, up to 1 additional hour on high or 2 hours on low. When ready to serve, return the chicken to the slow cooker. Sprinkle the Parmesan and parsley over the top. Enjoy warm.

- Peel and cut the sweet potatoes into large pieces, I cut mine into 1 inch pieces. Cut the onion the same way and separate the pieces so they aren't stuck together. Spray a 6-quart slow cooker with non-stick spray, add the sweet potato and onion pieces to the slow cooker in an even layer.
- Place a large skillet on the stove-top over medium high heat. Add enough oil to cover the bottom of the pan. Add the chicken skin down first, and cook until it browns, flip the chicken and brown the other side too. Remove the chicken with tongs and add on top of the sweet potatoes and onions in the slow cooker. Sprinkle the salt, pepper and thyme over the chicken and veggies.
