Grilled Asparagus with Green Peppercorn Vinaigrette image

Steps:

  • Whisk together the vinegar, mustard, salt and pepper in a small bowl until combined. Slowly whisk in the olive oil until emulsified and stir in the peppercorns. Let the vinaigrette sit at room temperature for 15 minutes before serving. Vinaigrette can be made up to 8 hours in advance and refrigerated.
  • Heat the grill to high.
  • Toss asparagus with the canola oil and season with salt and pepper. Grill until tender, about 5 to 7 minutes.
  • Place grilled asparagus on a platter and drizzle the vinaigrette over the top.

Steps:

  • Preheat the oven to 425 degrees F. Line a sheet tray with foil.
  • Add the asparagus in a single row to the prepared sheet tray. Drizzle with the olive oil, toss, and then season with some salt and pepper. Roast until tender, 15 minutes.
  • Serve on a bed of spring mix and drizzle with the Creamy Herb Vinaigrette.
  • Add the mayonnaise, vinegar, mustard, tarragon and shallots to a bowl and whisk until smooth and emulsified.

Grilled Asparagus with Camembert Crostini image

Steps:

  • Preheat grill or broiler oven. Snap off woody ends of each asparagus stalk and place asparagus into a large ziptop bag. Add in oil, vinegar and some salt and pepper. Seal bag and shake contents to coat asparagus well. Slice camembert and top bread slices with it.
  • Place asparagus and cheese bread onto the grill. Grill asparagus about 4 minutes per side and toast bread until crisp and cheese has melted. Transfer bread onto a cutting board and top with five or six asparagus spears. With a large knife, cut bread into three or four smaller pieces and transfer to a serving platter.
  • Drizzle bread with more balsamic vinegar. Serve immediately.

Figs with Fennel, Goat Cheese and Green Peppercorn Vinaigrette image

Steps:

  • Cut stem end off figs about 1/2-inch down. Use a melon baller or small spoon to hollow out the fig. Chop and reserve the insides of the figs. Set the figs aside. The stem pieces may be saved as "hats" for the presentation. Heat the olive oil in a medium saute pan. When the oil is hot but not smoking add the fennel. Toss or stir the fennel until golden. Season with salt and a touch of black pepper. Remove the pan from the heat and add the lemon zest, reserved fig insides and tarragon. Finish with the extra virgin olive oil, adding just enough to have the filling bind together. Remove the filling from the pan and let cool. Rinse, then finely chop the green peppercorns. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil and shallots. Season with salt after adding the peppercorns, as they can be salty. The vinaigrette can be made a day in advance and held refrigerated. Let the vinaigrette sit for about a half hour at room temperature before serving if you have refrigerated it. Just before serving, fill each fig with cooled fennel mixture. Cover with reserved stem pieces if you wish. Place 2 figs on a plate along with a wedge of the cheese. Drizzle the figs with the vinaigrette. Some suggested garnishes are fresh grape leaves, the fine inner leaves of the fennel bulb, or chervil plunches.

Steps:

  • Heat a charcoal or gas grill to medium-high.
  • Whisk the green peppercorns into the vinaigrette. Set aside.
  • Brush the asparagus with olive oil and season with salt and pepper. Grill until golden brown on all sides and crisp-tender, 4 to 5 minutes total. Remove from the grill, cut into 1- to 2-inch pieces, and toss with some of the vinaigrette.
  • Brush the bread on one side with canola oil and season with salt and pepper. Grill, oiled-side down, until light golden brown and crisp, about 1 minute. Flip, and grill a few seconds more, just enough to warm¿the bread should still be tender when pressed.
  • Top the toasted bread with some asparagus. Scatter the goat cheese, if using, on top and serve immediately.

  • Heat oven to 350 degrees. Line a sheet pan with parchment paper. With a pastry brush, lightly brush the slices of baguette with olive oil. Place pieces on pan, season with salt and pepper. Bake in oven for about 5-7 minutes until golden.
  • Blanch trimmed asparagus in rapidly boiling salted water for about 3 minutes. Transfer immediately to an ice bath. Remove once cooled to dry, then cut into 1-inch pieces.
