PEA, FETA AND MINT SALAD
Steps:
- In a medium saucepan, bring salted water to a boil. Blanch the peas in the boiling water until they are just tender and bright green, about 2 minutes. Refresh immediately by plunging them into a bowl of cold water. Drain and reserve the peas.
- In a small pan, heat 1 tablespoon of the oil over medium heat. Add the onion, and cook until soft, stirring occasionally, about 5 minutes.
- Meanwhile, in a small bowl, whisk together the mustard, the remaining 2 tablespoons olive oil, vinegar and honey, and season with salt and black pepper, to taste.
- In a large salad bowl, mix the peas, onions, pistachios, and pour over the dressing. Add the mint and snow pea leaves, and gently toss to coat with dressing. Top the salad with the feta cheese just before serving.
MINTY GREEK SALAD

HERB AND RADISH SALAD WITH FETA AND WALNUTS

- Heat oven to 350 degrees. Spread walnuts in a single layer on a baking sheet and toast for 10 to 12 minutes until lightly golden. Let cool, then chop roughly. Place in a sieve and shake away loose skin and crumbs. Set chopped nuts aside.
- Use a sharp knife or mandoline to slice the radishes and cucumbers into thin coins roughly 1/8-inch thick. Place in a medium bowl. Add walnuts.
- In a small glass or jar, whisk together lemon juice and olive oil to make the dressing. Season with salt and pepper to taste.
- Just before serving, season radishes, cucumbers and walnuts with a pinch of salt and dress lightly with 3 to 4 tablespoons of vinaigrette. Toss well to combine. Add crumbled cheese and toss gently to combine without breaking the cheese down too much. Arrange in a loose mound in a shallow serving bowl (or on a platter).
- Place herbs in the mixing bowl, season with a pinch of salt, and dress very lightly with about 1 tablespoon vinaigrette. Toss to combine, then pile the herb salad atop the radishes and cucumbers. Serve immediately.

- Heat grill to high. Cut the ciabatta into bite-size pieces and spread out in a single layer on a baking sheet. Drizzle over 1 tbsp oil. Grill for 3-4 mins, turning the pieces of bread occasionally, until just golden. Leave to cool.
- Put the toasted ciabatta in a serving bowl with tomatoes, cucumber, olives and feta. Tear up the basil, then scatter over the salad. Whisk the balsamic and remaining olive oil together and drizzle over, then mix gently to combine.

- Preheat oven to 400°F. Combine breadcrumbs, 2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl; toss to coat. Set aside. Cut kernels from corn cobs (You will have about 2 1/2 cups kernels). Set aside.
- Toss together eggplant rounds, 1/4 cup oil, 1 teaspoon salt, and 1/2 teaspoon pepper in a medium bowl until well coated. Arrange eggplant in a single layer on a lightly greased, aluminum foil–lined baking sheet. Brush top of each eggplant round with about 3/4 teaspoon mayonnaise and sprinkle with about 2 1/2 tablespoons breadcrumb mixture. Bake in preheated oven until eggplant is tender and breadcrumbs are golden brown, 20 to 22 minutes.
- Meanwhile, heat remaining 2 tablespoons oil in a large skillet over high. Add corn kernels, remaining 1 teaspoon salt, and remaining 1/2 teaspoon pepper. Partially cover skillet, leaving about a 2-inch gap (for steam to escape and to prevent corn from popping out of skillet). Cook, shaking skillet occasionally, until corn is well charred, about 8 minutes. Remove from heat, and let cool in skillet, partially covered, 1 minute. Transfer charred corn to a bowl.
- Arrange 4 eggplant rounds on each of 4 serving plates. Top each of the 4 servings with about 1/3 cup corn, 1/4 cup crumbled feta, and 1 tablespoon mint. Drizzle with chile oil.
