CRUSTY WHEAT AND RYE BREAD

The crust on this bread is supreme! Super crunchy with a wonderful texture!!! Then when you get to the inside, you wonder where this bread has been all your life. Seriously! lol This Bread is very similar to the ones you get at some of those fancy steak houses. I have no clue where I found the original recipe for this from, I had it tucked away in my "recipes to try file". Dug it out today and tweaked it to my liking. Enjoy! :o)

Crusty Wheat and Rye Bread image

Steps:

  • In a large mixing bowl add, 1 c bread flour, yeast, sugar and warm water, mix well with paddle attachment. Allow to rest 20 minutes. Switch to dough hook, then add in cocoa powder, rye, wheat and bread flours, salt, molasses and oil. Turn mixer to low and slowly start adding coffee. You may need to add a little warm water, 1T at a time, at this point to get the flours incorporated. Once all flour is incorporated, continue to knead for 5 minutes, dough will start to pull from sides of the bowl and gather in middle, forming a dough ball, if you accidentally added to much water and dough is not coming together or is sticky, simply add a little more bread flour, a couple tablespoons at a time. This will be a firm, dry to touch dough.
  • Place dough into a oiled or sprayed bowl, flip over to coat both sides. Cover with plastic wrap and place in warm place to rise until doubled in size, about 45 minutes. Then punch down and knead a couple times, place back in bowl, cover again and allow to double in size again. Then punch down, shape into loaf and place in greased 9x5 loaf pan. Cover with plastic wrap, allow to rise about 20 minutes. Preheat oven to 375. If desired, with a sharp knife, cut a 1" deep slit down the center. Then bake 35-45 minutes. Or until a thermometer reaches 170 approx. (I just use a meat thermometer) Remove from oven, to cooling rack for 2-3 minutes, then remove from pan to cooling racks to cool completely.

NEW YORK DELI-STYLE RYE BREAD

American "deli rye" is descended from traditional breads in Middle and Eastern Europe, where rye and wheat grow together and "bread spice" (a combination of caraway, coriander, anise and fennel seeds) is common. This kind of rye bread spread across the United States in the 20th century along with Jewish delicatessens, where it served as the perfect foil for rich fillings like pastrami and chopped liver -- not to mention tuna melts. The sour tang and chewy texture of the original breads have largely been lost over time, because rye bread today is made mostly from wheat flour and just a scant amount of rye. This recipe restores some of the original charm, but is still quick and easy for home baking.

New York Deli-Style Rye Bread image

Steps:

  • In the bowl of a standing mixer, whisk together the flours, caraway seeds (if using), salt and yeast. Put 1 1/4 cups lukewarm water into a small bowl, then stir in the honey and oil.
  • Using a dough hook attachment at low speed, gradually pour in the liquid mixture. Mix just until a cohesive dough starts to form and no streaks of dry flour remain, about 2 minutes. Scrape down sides of the bowl halfway through. Cover bowl tightly with plastic wrap and let dough rest for 20 minutes.
  • Turn mixer to medium-low and knead until smooth and elastic, easily clearing the sides of the bowl, about 8 minutes. The dough should be moist but not sticky; if needed, add more flour 1 tablespoon at a time.
  • Lightly oil a medium-size mixing bowl. Transfer the dough to a lightly floured surface and knead 30 seconds, shaping dough into a smooth round ball. Place seam side down in the oiled bowl. Cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
  • Stack 2 rimmed baking sheets and line the top sheet with aluminum foil. Punch the dough down to deflate. Turn out onto a lightly floured surface. Press and stretch into a rough 6-inch square.
  • Lift and fold top 2 corners of dough into the center of the square and press gently to seal. Lift and fold down the upper third of the dough toward the center and press gently to seal. Lift and fold down the top half of the dough to form a loaf, and pinch the seam closed. Turn the loaf seam side down, gently slide hands underneath, and transfer to the prepared pan. You should have an oval loaf about 8 inches by 4 inches; use hands to shape as needed. Cover with oiled plastic wrap and let rise until loaf increases in size by about half, 30 minutes to 1 hour.
  • Meanwhile, place a rack in the lower third of oven and heat to 450 degrees. When the dough has risen, make 3 deep slashes across the top, using a sharp paring knife or razor blade. Place in oven, reduce heat to 375 degrees and bake until deep golden brown, 35 to 40 minutes, rotating pan once during baking.
  • Meanwhile, dissolve cornstarch in 1 cup cold water. Simmer in saucepan or microwave until clear and syrupy. Transfer hot, baked bread immediately to a wire rack and brush top and sides with cornstarch mixture until glazed and shiny. Let cool completely before slicing.

2 teaspoons/6 grams caraway seeds (optional)

RYE BREAD (WHEAT FREE)

From William Davis, MD's book, Wheat Belly Cookbook. He says, "This recipe makes an incredible loaf of bread, rich with the unique flavor of caraway seeds. Use it as you would any other rye bread - for a ham and Swiss cheese sandwich, corned beef sandwich, or rye toast spread with butter. If you're in the mood for the hearty richness of a pumpernickel rye, add 2 ½ teaspoons instant coffee granules and 2 ½ tablespoons unsweetened cocoa powder to the dry ingredients." Per slice: 233 calories, 11 g protein, 9 g carbohydrates, 19 g total fat, 4 g saturated fat, 4 g fiber, 412 mg sodium.

Rye Bread (Wheat Free) image

Steps:

  • Preheat oven to 350°F.
  • Prepare 8 ½ x 4 ½ inch loaf pan by greasing.
  • Using a food processor, combine the almond meal/flour, garbanzo bean flour, flaxseeds, baking soda, salt, and ground caraway seeds. Pulse on low speed until well blended. Add 2 teaspoons of the whole caraway seeds, the egg yolks, butter, buttermilk, and xylitol or stevia and pulse just until blended.
  • Add the egg whites to a large mixing bowl and beat on high with an electric mixer until soft peaks form. Pour into the flour mixture and pulse until the egg whites are evenly distributed, avoiding running the machine at a constant speed. Spread into the pan and sprinkle with the remaining 1 teaspoon caraway seeds. Bake for 50 to 60 minutes, or until a wooden pick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes. Transfer to rack and cool completely.

We thought we'd landed upon the simplest yeast bread recipe in 2007, when Mark Bittman wrote about the no-knead approach of Jim Lahey, owner of Sullivan Street Bakery. It quickly became (and remains) one of our most popular recipes because it made bakery-quality bread a real possibility for home cooks. But then we heard about Jeff Hertzberg, a physician from Minneapolis, who devised a streamlined technique for a crusty loaf of bread. Mix flour, salt, yeast and water. Let it sit a bit, refrigerate it, take some out and let it rise, then bake it. The crusty, full-flavored loaf that results may be the world's easiest yeast bread.

Simple Crusty Bread image

Steps:

  • In a large bowl or plastic container, mix yeast and salt into 3 cups lukewarm water (about 100 degrees). Stir in flour, mixing until there are no dry patches. Dough will be quite loose. Cover, but not with an airtight lid. Let dough rise at room temperature 2 hours (or up to 5 hours).
  • Bake at this point or refrigerate, covered, for as long as two weeks. When ready to bake, sprinkle a little flour on dough and cut off a grapefruit-size piece with serrated knife. Turn dough in hands to lightly stretch surface, creating a rounded top and a lumpy bottom. Put dough on pizza peel sprinkled with cornmeal; let rest 40 minutes. Repeat with remaining dough or refrigerate it.
  • Place broiler pan on bottom of oven. Place baking stone on middle rack and turn oven to 450 degrees; heat stone at that temperature for 20 minutes.
  • Dust dough with flour, slash top with serrated or very sharp knife three times. Slide onto stone. Pour one cup hot water into broiler pan and shut oven quickly to trap steam. Bake until well browned, about 30 minutes. Cool completely.

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add brown sugar, caraway, oil, salt and remaining water; mix well. Stir in rye flour and 1 cup all-purpose flour; beat until smooth.   • In a large kitchen aid mixer bowl, combine 2 1/4 cups warm water (about 100˚F), 1 1/2 Tbsp sugar and 1/2 Tbsp salt; stir to dissolve.
  • Sift the 3/4 cup wheat flour, 3/4 cup rye flour, and 3/4 cup better for bread flour with 2 tsp yeast into the salted water. Do not discard anything left in the sifter; toss it into the batter. Whisk together until well blended. Let it rise on the counter uncovered for 3 hours, stirring the batter about once every hour. It will be bubbly.
  • Using the dough hook attachment add 1/2 cup better for bread flour until well blended, scraping down the bowl if needed. Blend in the rest of your bread flour (2 cups) a heaping Tbsp at a time, letting the dough dissolve the flour in between each spoon (this takes about 20 min).
  • Once all the flour is incorporated, add 2 Tbsp canola oil. Let mix for an additional 20 more minutes with the dough hook on speed 2 or until dough is no longer sticking to your bowl. Note: after you add the oil it will look like it's coming off the walls and then it will appear to get stickier, then towards the end of your 20 minutes, it will actually stop sticking to the walls as it mixes. Just let it do it's thing and everything will work out ;). Remove dough hook and let it rise in the bowl, uncovered, until double in volume (45 min).
