CUBAN TOASTIES
I love cuban snadwiches, this is my version as an appetizers.

Steps:
- 1. Preheat oven to 450 degrees. In the manual food processor, chop the ham. Then add the cheese, mayonnaise, and mustard. Mix in the Manual food processor.
- 2. Arrange the bread slices on a flat stone or cooking sheet. Place 1 pickle slice on each slice of bread.
- 3. spread about 1 tablespoon (or 1 small scoop) of the ham mixture on top
- 4. Bake the toasties for 8 to 10 minutes, until golden and bubbly. Cool for a few minutes before serving. Makes about 36

Here's how I build a Cuban, or Cubano, sandwich. I like to use pulled pork. Carnitas would work too. These ingredients and amounts are open to your own personal preferences, but here's the general idea.

Steps:
- Mix mayonnaise, mustard, and cayenne together in a bowl to make the sauce.
- Trim off ends of bread. Cut loaf in half and evenly split bread to make tops and bottoms of 2 sandwiches. Spread each half on both sides generously with the mayo/mustard sauce.
- Divide sandwich ingredients between the two bottom halves in this order: 2 slices Swiss cheese, 3 slices ham, hot cooked pork, pickle slices, and 2 more slices of Swiss cheese. Place tops on sandwiches.
- Melt butter in a heavy skillet over medium heat. Place sandwiches in skillet and press down with a heavy weight (such as another skillet or foil-wrapped bricks). Toast sandwiches until bread is crisp and filling is heated through, 3 or 4 minutes per side.

- In a small bowl, combine the ham, cheese, mayonnaise, onion, chili sauce, and mustard.
- Arrange the bread slices on a foil-lined baking sheet.
- Place 2 pickle slices on each bread slice; then spread about 1 tablespoon of the ham mixture on top.
- Bake for 8-10 minutes or until gold and bubbly.
- Cool a few minutes before serving.

- 1. If you have an Expresso coffee maker follow the instructions and make about a half cup of expresso coffee or as it is sometimes called demi-tas coffee. I have also purchased an on the burner expresso coffee maker. Looks like a little coffee pot. They are relatively inexpensive about $8.00 or $10.00. The smaller ones will make 2 demi-tas cups of expresso coffee and the larger will make 4/6 demi-tas cups of expresso. Can be purchased at any Latin food store or grocery also can be purchased in any Italian grocery store.
- 2. After you have made your expresso coffee set aside do not add any sugar, Heat your milk to the point of almost steaming do not boil. Add the few grain of salt stir with a spoon and add all of your expresso coffee. Stir well and then add your sugar about 4 tablespoons. Stir again and taste to see if it is sweet enough for you. Some people don't like it to sweet and other's like it sweet. That's up to your taste. Can be drunk as is or accompanied with hot Cuban toast; or a full breakfast. Enjoy
- 3. Cuban Toast: Split a large loaf of Cuban bread or French or Italian bread horizontally and butter each side. Then close the halfs and butter the outside on both sides. Put into a hot sandwich press, or a George Foreman grill as I do or a panini press, or a hot griddle with a heavy weight to press on top of the toast, such as a cast iron pan. toast about 1 1/2 minutes on each side. When crispy and golden on both sides remove to a dish and cut diagonally. Serve with your hot Cafe con Leche. Delicious; Enjoy

This Cuban sandwich is piled high with ham, roast pork loin, Swiss cheese, and dill pickles, then toasted to warm and crunchy perfection.

- Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
- Preheat oven to 500 degrees F (260 degrees C).
- Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
- Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
- Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

- Fill your espresso maker with water and ground espresso according to the manufacturer's directions. Place on the stove at medium-high heat and brew the espresso. Set aside.
- In a saucepan, heat the milk until very hot (close to boiling). Remove it from the heat and transfer to a coffee mug. If you’re using a microwave, pour the milk in a coffee mug and heat up on HIGH for 1 minute or until very hot. Stir in the sugar.
- Once you’ve heated the milk and coffee is ready, start with 1/4 cup of coffee. Pour coffee into the mug and stir until light brown/beige color.
- Taste adjust as necessary. If you want more coffee flavor, add more coffee. If you want it sweeter, add more sugar. If you wanted to elevate the flavor, you can add a very small pinch of salt to the cafe con leche. Enjoy!
