Steps:
- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.
APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

DAD'S APPLE CRISP
This is one of my all time favorite recipes. Do not use Golden or Red Delicious apples, unless you want sweet syrupy goo. Can substitute other fruits for apples such as pears, or just ripe peaches and apricots.

- Preheat oven to 350° F with a rack in the middle position. Lightly grease an 8x8-inch square baking dish.
- In a large bowl, combine all of the apple filling ingredients: apples, flour, ¼ cup brown sugar, granulated sugar, vanilla, cinnamon, nutmeg and salt. Stir and then set aside. It's ok if everything is not well combined at this point, because the apples will release some of their juices while you prepare the topping and then you will stir the apple mixture again.
- Stir the apple mixture again until everything is well combined. Pour the apples and all of the juices from the bowl into the prepared baking dish. Sprinkle on the crisp topping.
