DALE DEGROFF'S CAIPIRINHA

This version of the Brazilian national cocktail comes to us from mixologist Dale DeGroff.

Steps:

  • In a large, sturdy glass, using a muddler or the back of a wooden spoon, muddle together the simple syrup and lime, to extract the oils from the skin of the lime. Add Cachaca, and fill the glass with ice. Shake vigorously, and pour contents into an old-fashioned glass.

3/4 to 1 ounce Dale DeGroff's Simple Syrup
1/2 lime, halved lengthwise and crosswise
2 ounces Cachaca
Large ice cubes

Steps:

  • Shake all ingredients together with ice and strain into a Hurricane glass filled with ice. Garnish with fresh tropical fruit.

1 oz. dark rum
1 oz. light rum
1/2-oz. Galliano
3/4-oz. Fresh Lime Juice
1 oz. passion fruit syrup
1-1/2 oz. orange juice
1-1/2 oz. pineapple juice
dash of Angostura Bitters
fresh tropical fruit for garnish
ice

Steps:

  • Shake the ingredients in an iced shaker until good and frosty, then strain into a chilled cocktail glass.

1 1/2 ounces rum (lighter rum is better)
1/4 ounce Maraschino liqueur
3/4 ounce simple syrup
1/2 ounce grapefruit juice
3/4 ounce lime juice

Caipirinha, Brazil's national drink is made with cachaca, a potent sugarcane liquor. You can substitute light rum if you can't find cachaca.

Steps:

  • Put a lime half in each of 4 tumblers and sprinkle each with 2 teaspoons sugar. Using a wooden reamer, crush the flesh of the limes. Fill glasses with ice and pour cachaca over it. Stir well and serve.

Coarsely crushed ice
1 cup cachaca

CAIPIRINHA II

Now considered the national drink of Brazil, the Caipirinha was not always so respectable. In fact, the name comes from a somewhat derogatory word roughly equivalent to "hillbilly." The cocktail's main ingredient, cachaça, is an aguardiente that, like rum, is made from sugarcane. But cachaça has a bite and flavor more characteristic of a rough-edged tequila than of its more refined cousin. In fact, bartenders who run out of cachaça have been known to substitute equal parts white rum and white tequila in its place.A Caipirinha is usually made by muddling pieces of lime with sugar; we chose, for simplicity's sake, to juice the limes instead. For a more authentic flavor, you can mash a piece of lime rind in the bottom of the glass before serving.

Steps:

  • Squeeze enough juice from limes to measure 2 cups.In a pitcher, stir together lime juice and sugar until sugar is dissolved. Add ice cubes and cachaça, stirring until combined well. Serve drinks garnished with lime wedges and/or sugarcane.
