Steps:

  • Preheat oven to 350°F.
  • Dissolve coffee crystals in hot water; set aside.
  • In a large bowl, beat butter, sugar, baking soda and salt until well combined.
  • Beat in coffee mixture, eggs, and vanilla.
  • Beat in as much flour as you can then stir in any remaining flour.
  • Stir in choclate chips and almonds.
  • Drop dough in heaping teaspoons 2-inches apart on a greased cookie sheet.
  • Bake in a preheated oven 8-10 minutes or until edges are lightly browned.

Steps:

  • COOKIE DOUGH:
  • Cream butter with sugar until fluffy.
  • Beat in eggs, one at a time, and almond extract.
  • Stir together flour, salt, baking soda and powder; gradually stir into creamed mixture until well blended.
  • Cover and refrigerate for at least 1 hour or until firm.
  • FILLING:
  • Meanwhile, mix together filling ingredients until smooth.
  • ASSEMBLY:
  • Using hands, roll heaping teaspoonfuls of dough into 1-inch balls.
  • With finger, make indentation in centre of each; stuff with about 1/4 teaspoons filling. Pinch off dime-sized piece of dough; press over filling to cover.
  • Reroll in palms to seal and smooth edges.
  • Place 2 inches apart on greased baking sheets. Brush tops with egg white; press almond lightly into each.
  • Bake in 325oF oven for 15 to 18 minutes or until light golden.
  • Let cool on racks. Makes about 5 dozen.

  • Preheat the oven to 325°F Lightly grease (or line with parchment) two baking sheets.
  • Blend the almond paste, sugar, and salt until the mixture becomes uniformly crumbly; this is best done in a stand mixer.
  • Add the egg whites gradually, while mixing, to make a smooth paste.
  • Stir in the flavorings.
  • Scoop the dough by heaping tablespoons onto the prepared pans.
  • Sprinkle the cookies heavily with confectioners' sugar, then use three fingers to press an indentation into the center of each cookie.
  • Bake the cookies for 20 to 25 minutes, until they're brown around the edges. Remove them from the oven, and let them cool right on the pan.

These cookies where my first foray into baking, and they were very easy for a beginner. My family, who knows my cooking inabilities, thought they were slice and bake! Suggestion: I use a Silpat silicon baking sheet on my cookie sheet. It keeps the bottoms from getting too done.

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl combine the flour, baking powder, baking soda, and salt. Whisk to incorporate and set aside.
  • In another medium bowl combine the butter, chocolate hazelnut spread, sugar, and brown sugar. Using an electric mixer, cream the ingredients together, about 4 minutes. Add the egg and vanilla and beat until smooth, about 1 minute.
  • Using a wooden spoon or rubber spatula, stir in the flour mixture one-third until just combined. Add the almonds and the chocolate chips and stir until just combined.
  • Using a tablespoon measure, spoon out the cookie dough onto a cookie sheet, spacing the mounds about 4 inches apart. Bake until lightly golden around the edges, about 8 to 10 minutes. Use a metal spatula to transfer the cookies to a wire rack and let cool.

Sirups Kager (Danish Brown Spice Cookies) image

Steps:

  • In a medium mixing bowl, cream butter or margarine, sugar and corn syrup. When well combined, stir in cinnamon, cloves and baking soda mixture. Slowly add flour and mix well after each addition until dough becomes stiff. Cover dough with plastic wrap and refrigerate until firm, approximately one hour. This time is included in the preparation time.
  • Preheat oven to 400 degrees. On a floured surface, roll dough to 1/8-inch thickness. Using a reindeer or desired shaped cookie cutter, cut shapes into dough. Dough can also be rolled into logs about 1-inch in diameter and sliced crosswise into 1-inch-thick rounds.
  • Bake on ungreased cookie sheets until lightly browned, about 8 to 10 minutes.
