Date recipes are some of my favorite desserts to cook up. These date treats are very easy to bake, and one sheet of them will yield 48 good-sized bars. I sometimes add nuts, coconut or candied fruit. -Dorothy DeLeske, Scottsdale, Arizona

Steps:
- In a saucepan, combine dates, sugar and water. Cook, stirring frequently, until very thick. Stir in walnuts, if desired; cool. , Sift the flour, salt and baking soda together in a large bowl; add oats and brown sugar. Cut in butter until mixture is crumbly. Sprinkle water over mixture; stir lightly. Pat half into a greased 13x9-in. baking pan. Spread with date mixture; cover with remaining oat mixture and pat lightly. , Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

These tender bars from Rita Christianson of Glenburn, North Dakota have a sweet raisin filling tucked between a golden oat crust and topping. The old-fashioned treats are perfect for potlucks and cost a mere 20¢ each.

- In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. , Firmly press 3-1/2 cups of crumb mixture into a greased 13-in. x 9-in. baking pan. Spread with raisin filling. Sprinkle with remaining crumb mixture. , Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars. Refrigerate leftovers.

- Filling-------.
- Combine dates, water, raisins and lemon juice in 4 cup measure.
- Cover with vented plastic wrap and microwave at high 4-6 minutes or until boiling.
- Stir every 2 minutes.
- Dates should be soft.
- Let stand, covered, 5 minutes.
- Uncover and cool to lukewarm, stirring occasionally.
- Crumbles------.
- Combine first 5 dry ingredients in mixing bowl.
- Cut in butter until mixture is crumbly.
- Press half firmly into 8 inch square microwave baking dish.
- Spread with date filling.
- Sprinkle with remaining crumble mixture, patting down lightly.
- Microwave at medium high for 9 minutes, rotating every 3 minutes, (not necessary if you have a rotating plate) remove from microwave and cover with aluminum foil.
- Let stand covered directly on counter for 10 minutes.
- Uncover and cool completely on wire rack.
- Cut into small squares.

- 1. Stir together flour, sugar, soda, salt and cinnamon. Set aside.2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and buttermilk. Let stand 3 minutes or until cereal softens. Add eggs and oil. Beat well. Add dates and raisins. Stir in flour mixture, mixing only until combined. Spread batter evenly in 9 x 9 x 2-inch baking pan coated with cooking spray.3. - In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.

- In a small bowl, pour boiling water over dates, and set aside to cool. Preheat oven to 325 degrees F (165 degrees C). Grease a 10x10 inch baking pan.
- In a medium bowl, cream together the shortening and white sugar. Add eggs, one at a time, beating after each addition. Add the dates, including any water; mix well. Sift together the flour, cinnamon, nutmeg, and baking soda; stir into the date mixture. Then stir in the nuts.
- Spread the mixture evenly into the prepared 10x10 inch pan, and bake for 45 minutes in the preheated oven. When cool, cut into bars, and roll each bar in confectioners' sugar.

- Dice the dates in your food processor. If you soak them first, it will be easier to dice, but if you’re like me, you’ll forget to do that ahead of time, so just go ahead and dice them. You may need to pulse for 1-2 minutes.
- Add the dates, raisins, and water to a saucepan on medium heat. Heat to a boil, stirring occasionally. Turn the heat to low and continue to cook, stirring occasionally, until thickened (about 10 minutes.) Stir in the walnuts, then turn the heat off, and set aside.
- While the date mixture is cooking, add the shortening, coconut oil, and coconut sugar to your food processor and pulse. Scrape down the sides, then add the almond flour, coconut flour, salt, baking soda, and 3/4 cup of coconut flakes. Pulse again, scraping the side, and pulse one more time.
