CRUMB-COATED BAKED CHICKEN
This light, oven-fried chicken has a pretty golden coating and a slightly crunchy texture. "My family really loves this, and I like that it has less fat than traditional fried chicken," relates Suzanne Zick from Maiden, North Carolina.

Steps:
- Line a 15x10x1-in. baking pan with foil and coat the foil with cooking spray; set aside. , In a shallow bowl, combine buttermilk and hot pepper sauce. In another shallow bowl, combine the bread crumbs, cornmeal and seasonings. Dip chicken in buttermilk mixture, then roll in crumb mixture. Place bone side down in prepared pan., Spritz chicken with cooking spray. Bake at 425° for 15-20 minutes. Remove from oven; spritz again with cooking spray. Bake 15-20 minutes longer or until a thermometer reads 170°.

DELICIOUS BAKED CHICKEN
Very moist chicken. Serve with a cheesy side if desired. Being from the South, I serve this with garlic cheese grits! (Note: For a slight variation in taste, you can use lemon flavored oil.)

- Preheat oven to 350 degrees F (175 degrees C).
- Rub each chicken breast with olive oil, then place in a lightly greased 9x13 inch baking dish. Season with garlic powder, salt and pepper to taste. Pour Worcestershire sauce over each breast. Cover dish with aluminum foil and bake in the preheated oven for 45 minutes. Check chicken and remove cover if desired. Bake for another 15 minutes.

DELICIOUS COATED BAKED CHICKEN
The crazy ingredient in this recipe is dry mashed potato flakes. Before you say "ewww......", I know it sounds very weird, but in the end, you don't end up with mashed potato-tasting chicken. You have a mixture of the potato flakes along with the grated Parmesan cheese plus the spices, and I'm telling you.... the end result is amazing! This chicken is just packed with flavor and goodness. This is one of my all time favorite chicken recipes.

- Remove skin from chicken, rinse, and pat dry. Set aside.
- In a bowl, beat eggs and milk.
- In a separate bowl, combine potato flakes, garlic powder, seasoned salt, paprika and poultry seasoning. (You can add a little pepper, too, if you'd like to!)
- Pour Parmesan cheese into the mixture, then mix together well with a fork.
- Line a large baking sheet with aluminum foil, and spray well with cooking spray. (using foil makes for much less sticking and easier clean-up!)
- Dip chicken pieces in egg mixture, then roll each piece in the potato flake mixture to coat evenly on all sides. (Try not to touch coated chicken too much with your fingers if they're wet. I use two forks to roll the chicken and lift it onto the baking sheet, or you could use tongs. The potato flakes melt a little bit if your fingers are wet.)
- Put butter into a measuring cup (only because it makes for easier drizzling), and melt for a few seconds in your microwave.
- When done, remove from microwave and carefully drizzle a little bit over top of each coated piece of chicken. You don't need to saturate chicken with the butter or it will get too greasy. A little bit goes a long way.
- Bake chicken, uncovered, on middle rack of oven at 400 degrees for 35 minutes, turning chicken once after about 15 minutes.
- After 35 minutes, turn chicken once again, increase oven temperature to 425 degrees and bake 10-15 minutes longer, or until chicken is tender and done.
