BAKED CUSTARD

- In a bowl, combine eggs, sugar, spices and vanilla. Blend in milk. Pour into a 1-1/2-qt. baking dish. Place baking dish in a cake pan in oven; add 1 in. water to pan. , Bake at 325° for 1 hour or until a knife inserted near middle comes out clean.

COMFORT FOOD BAKED CUSTARD
Easy to make,easier to enjoy! This custard is done when it appears set but still jiggles slightly. The custard will firm up as it cools. Bet you can't just eat a little!

- Heat oven to 350*.
- In large bowl, combine eggs, sugar, salt and vanilla; blend well.
- Gradually stir in milk.
- Pour into 6 ungreased 6-oz.
- custard cups.
- (If desired, pour mixture into 1 qt. casserole dish.) Sprinkle with nutmeg.
- Place custard cups in 13x9 inch pan.
- Pour boiling water into pan around custard cups to a depth of 1 inch.
- Bake at 350* for 45 to 55 minutes or until knife inserted near center comes out clean.
- Serve warm or cold.
- Store in refrigerator.

- heat oven to 325*F.
- in medium bowl gradually whisk sugar into egg yolks.
- gradually whisk remaining ingredients except nutmeg into egg mixture.
- pour into 6 (6oz) custard cups or ramekins.
- place custard cups in 13x9 baking pan. fill around custard cups with 1inch of warm water.
- sprinkle top of custard cups with nutmeg.
- bake for 50 to 60 minutes or until knife inserted in center comes out clean.
- serve warm.

This recipe is from the Betty Crocker 1971 recipe card set. I posted it in response to a request for recipe on the boards. The recipe can easily be cut in half for six servings.

Steps:
- Heat oven to 350.
- Blend eggs, sugar, salt and vanilla.
- Gradually stir in scalded milk.
- Pour into twelve 6 oz custard cups.
- Sprinkle with nutmeg.
- Place cups in 2 baking pans, 13 X 9 X 2.
- Pour very hot water into pans to within 1/2 inch of tops of cups.
- Bake about 45 minutes or until knife inserted halfway between center and edge comes out clean.
- Remove cups from water and chill.
- Unmold and top with fresh sweetened berries.
- May top with a dollop of whipped cream dusted with nutmeg or a sprig of mint, if desired.

This was my favorite dessert that my grandmother used to make and my family loves it too. We always serve it cold and as it has a long oven time we usually have it in the fall/winter. Recipe source: local newspaper.

- Preheat oven to 300°F.
- Combine eggs, milk, sugar and vanilla in a bowl, mixing until smooth.
- Pour into six ramekin dishes or custard cups.
- Sprinkle with nutmeg.
- In a large baking dish filled half-way up with water, place custard cups.
- Bake for 1 hour 15 minutes to 1 hour 30 minutes or until knife comes out clean when inserted into middle of one of the custards.
- Refrigerate until serving time.

BAKED CUSTARD
When my daughter was pregnant with her first child, she craved this custard. I made this almost every day for her. My grandmother told me that the secret for smooth custard is not to beat the eggs too much; just make sure they are blended well and that there are no pieces of egg floating around the mixture. Also, put a clean dish towel in the bottom of the baking dish that you are placing the custard cups into, and add water to the dish. It don't know what this is supposed to do, but my custard is always smooth and good.

- Beat slightly to mix well--eggs, sugar, and salt.
- Scald the milk and add slowly to the egg mixture.
- Add the vanilla.
- In a baking dish or pan, place the custard cups; fill them with the egg mixture.
- Add water to baking dish.
- Grate or sprinkle nutmeg on top of each one.
- Bake 350 degrees for 30-35 minutess or until a silver knife comes out clean when thrust into the center of the custard.
- NOTE: Usually that time is good for me and I don't need to check it with a knife.
