PEAR BUTTER

Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

Pear Butter image

Steps:

  • Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
  • Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
  • Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

Steps:

  • In a kettle, combine water and 1/4 cup lemon juice.
  • Peel, core and quarter the pears, placing them in lemon juice mixture to retard browning until all have been peeled.
  • Drain liquid in kettle.
  • Add grape juice and remaining lemon juice; bring to a boil.
  • Reduce heat to medium;cook until pears are soft,about 20@minutes, stirring occasionally.
  • Cool.
  • Press through a sieve or food mill, or process in a blender until smooth.
  • Return puree to kettle.
  • Add spices;cook and stir until very thick;20-35 minutes.
  • Remove from heat; stir in sweetener.
  • Adjust sweetner to taste.
  • Pour into jars or plastic containers.
  • Refrigerate up to 3 weeks.
  • (For longer storage time pour hot into hot jars, leaving 1/4 in. headspace. Process in a boiling~water bath for 10 minutes. Use within 3 weeks of opening) Diabetic Exchanges: One 1-tablespoon serving equals 1/2 fruit.

Diabetic Pear Strudel image

Steps:

  • Preheat oven to 425F (220C)Gas Mark 7.
  • Use nonstick cookie sheet, spray lightly or cover with parchment paper.
  • Peel, core and thinly slice pears.
  • Lightly coat a nonstick pan with butter flavored cooking spray. (I just used butter).
  • Add the pears and saute for 2 minutes.
  • Stir in the zest, juice and sugar substitute. Cook until the pears are just cooked through. Set aside.
  • On a floured surface, roll the puff pastry to make a 12 1/2 X 10 1/2 (31.25 x 26.25) inch rectangle.
  • Sprinkle almonds on the pastry.
  • Drain pears and place down middle third (long way) of the puff pastry to within 1/2 inch (1.25cm) of the top and bottom edge.
  • Spray the edges of the pastry and fold each 1/3 side over fruit. I brushed on butter.
  • Place seam side down on cookie sheet.
  • Make slashes every 2 inches (5 cm).
  • Mix sugar and cinnamon and sprinkle on top.
  • Coat with butter flavored cooking spray. If you use melted butter, put on before cinnamon/sugar.
  • Bake 25-30 minutes until puffed and brown.
  • Allow to cool to room temperature then cut into 8 pieces. Can serve with sugar free icecream or whipped cream.
