DOUBLE CHOCOLATE NUT COOKIES
The original recipe has been changed to my liking. These cookies are nearly flourless. Wow!!!!! I officially have a new favorite cookie. I think I died and went to chocolate Heaven. No kidding!!! These cookies are a chunky triple chocolate delight. I would suggest making a double batch. They sure will tame a chocolate craving....

Steps:
- 1. Heat oven to 350 degrees. In a bowl mix flour, baking powder, salt, and cocoa together. Set aside.
- 2. Melt 8 ounces of chocolate and the butter over low heat together in large sauce pan continuously stir until smooth.
- 3. Pour mixture into bowl to cool thoroughly. I cooled in fridge. After it cools, stir in sugar and vanilla until combined.
- 4. Stir in eggs one at a time until blended. Stir in the flour mixture until combined. Batter will be brownie like and not thick.
- 5. Stir in the chocolate chips and nuts. Refrigerate dough for 1-2 hours. Drop dough by heaping tablespoons on ungreased cookie sheet. I line my pans with parchment paper. Bake 15-17 minutes until set.
- 6. Cool cookies Completely on pan. Do not remove while hot. Move to wire rack to cool thoroughly. Time to eat!

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the margarine, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Sift in the flour, baking soda, salt, and cocoa powder; mix well. Stir in the chocolate chips. Roll tablespoonfuls of cookie dough into balls and place them 1 inch apart onto the prepared cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

CHOCOLATE OVERLOAD COOKIES

- Line two baking sheets with parchment paper.
- Cream together the dark brown sugar, granulated sugar and butter in a stand mixer fitted with the paddle attachment, scraping the sides once, until fluffy, 3 to 4 minutes. Add the eggs, one at a time, mixing after each addition. Mix in the vanilla.
- Sift together the flour, cocoa powder, baking soda and salt, then add in batches to the mixer, mixing until just combined after each addition. Gently stir in the regular-sized chocolate candies, as well as the chocolate chips and dark chocolate chunks.
- Using a 1/4-cup measure, portion the dough onto the two parchment-lined baking sheets. Place the mini chocolate candies into the tops of the portioned dough. Place in the refrigerator for 30 minutes.
- When ready to bake, preheat the oven to 350 degrees F.
- Remove the dough from the fridge and bake until the cookie centers are just set, 18 to 20 minutes. Allow the cookies to sit for 10 minutes before transferring to a cooling rack to cool completely.
DOUBLE CHOCOLATE COCONUT COOKIES

- Preheat oven to 350 degrees. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth, about 2 minutes. Mix in eggs, 1 at a time. Stir in vanilla.
- Sift flour, cocoa powder, baking soda, baking powder, and salt into a medium bowl. Mix into butter mixture on low speed until well combined. Stir in chocolate, coconut, and walnuts.

- Preheat oven to 375 degrees.
- Cut 8-ounce (2 sticks) unsalted butter into pieces and allow to soften.
- In medium bowl, mix together 1 1/2 cups flour, 1/2 cup cocoa powder, salt and baking powder; set aside.
- On cutting board, chop 5 1/2 ounces dark chocolate into 1/2-inch chunks; set aside.
- Roughly chop 3/4 cup walnuts and set aside.
- In separate bowl using an electric mixer, cream together butter with both sugars. Add the eggs, one at a time, to creamed mixture. Beat in 1 t pure vanilla extract.
- Slowly add dry ingredients to creamed mixture, beating well with electric mixer after each addition.

- Bake 9 minutes on middle oven rack.
- Let cookies cool for several minutes on cookie sheet before transferring to a cooling rack (they will be too soft when first removed from oven).
