DARK CHOCOLATE SAUCE WITH FRESH BERRIES
Steps:
- Melt the chocolate in a double boiler. Once melted, add the sugar and half-and-half, and stir until well blended. Stir in the butter and vanilla extract until the sauce is smooth and glossy.
- Line up four small bowls or glasses, and place a dollop of the chocolate sauce in each. Evenly divide the blackberries, blueberries and raspberries between the four bowls. Top each with 2 tablespoons of the chocolate sauce, and serve.

- Soak berries in liqueur for 20 minutes.
- Melt chocolate with cream and salt over low heat until smooth and combined.

Steps:
- 1. Wash and split berries, place in bowl and add orange liqueur or extract, cover with plastic wrap and place in fridge for at least 30 minutes.
- 2. In a medium sauce pan add heavy cream and over medium heat bring to a slow boil and let reduce down some, break chocolate bar into pieces and add to cream,add salt and sugar, stir until chocolate is melted. Remove from heat and let cool. Will thicken some as it cools.
- 3. With a slotted spoon place berries in a glass serving bowl( I used my martini glasses) spoon chocolate over and top with whipped cream( store bought is ok, but I made mine with heavy cream and confectioners sugar to sweeten)

- Make the sauce. Pour the cream into a small saucepan and break in the chocolate. Heat gently, stirring, until the chocolate melts into a smooth sauce. Take care not to overheat or the chocolate will seize into a hard lump. Remove from the heat and stir in the rum, if using.
- Scatter the frozen berries on 4 dessert plates or in shallow bowls. Pour the hot chocolate sauce over the fruits and serve immediately, as the fruits start to defrost.

Beautiful summer dessert using fresh berries and a splash of pear liqueur. Enjoy a la carte or a la mode. Exceptionally lovely on the Fourth of July. Serve berries by themselves or over vanilla gelato, with a small amount of excess liquid - but it should not be a berry soup.

- Combine sugar with water in a saucepan over medium-high heat, stirring until the sugar has dissolved and the mixture comes to a boil. Reduce heat to low and simmer for 5 minutes; remove from heat and let stand 5 more minutes.
- Stir pear liqueur into the syrup and refrigerate for 1 hour.
- Gently combine strawberries, blueberries, and blackberries in a large bowl and pour syrup over the berries to coat. Allow berries to stand for about 3 hours to absorb flavors. Mixture can stand up to 3 days if desired.

DRUNKEN CHOCOLATE-BERRY FONDUE
Steps:
- Home Preparation: In a blender, puree 10 ounces fresh or frozen mixed berries with as little water as necessary to liquefy. In a food dehydrator, dehydrate puree until crispy. (Or buy predried berries). Combine dried berries, chocolate chips, sugar, cocoa, cornstarch and cayenne in an airtight bag or container.
- Campsite Preparation: Boil 1 1/2 to 2 1/2 cups water (use 2 1/2 cups water if you will be reconstiting dried fruit for dipping, otherwise use 1 1/2 cups). Remove 1 cup water from pot. Add dry berry-cocoa mixture to remaining 1 1/2 cups water. Stir. Cover. Let stand 5 minutes off heat. Meanwhile, if using dried fruit for dipping, pour 1 cup reserved water over dried fruit and 1/4 cup sugar in a bowl. Cover. Let stand until fruit is reconstituted.
- Bring berry mixture to a boil, then reduce heat to lowest possible setting. Simmer for 5 to 10 minutes. Remove pot from heat, carefully pour in rum. Return to heat, tilting pot into flame to ignite fondue. Stir. Serve in individual cups or from the communal pot with your choice of dippers.
BERRIES WITH CHOCOLATE SAUCE
Steps:
- Preheat the oven to 475 degrees. Set angel food cake slices on a baking sheet and toast in oven to make less spongy. Rinse and hull the strawberries and cut them in half (or rinse and dry the raspberries.)
- Bring sugar, rum, water and chocolate to a simmer (sauce will be thin.) Remove from heat, add butter and cream.
- Set angel food cake in center of plate; top with strawberries. Drizzle chocolate sauce over the top.

- Combine the red wine, star anise, cinnamon stick, cloves, brown sugar and salt in a medium saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer for 15 minutes. Strain into a medium bowl. Add the berries and stir to combine. Cover and refrigerate until chilled, 2 hours.

- Pile the berries into pretty glasses or onto plates and freeze for 20 mins - press the fast-freeze button if you have one. The berries should become iced but not frozen solid.
- When ready, place the chocolate in a non-metallic bowl with the cream and microwave on High for 1 min. Check to see if it is soft enough to stir into a sauce, if not give it 30 secs, then stir again. Leave to cool slightly, stirring occasionally. To serve, pour the chocolate sauce over the iced berries.
