APPLE PIE WEDGES
This is an apple pie flavored shortbread cookie. It is wonderful for a holiday brunch, as well as a simple dessert for an intimate holiday dinner. They are also simple to make.

Steps:
- In a large mixing bowl, beat butter and sugar at medium speed until fluffy. Beat in egg yolk and apple butter. Add flour, cinnamon, apple pie spice, and vanilla. Beat at low speed until well blended.
- Divide dough in half. Shape each half into a 6-inch disc on waxed paper. Refrigerate for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Invert one disc of dough into ungreased 9-inch round pie plate. Press dough into plate with lightly floured hands, covering plate completely. Flute edges using the handle of a wooden spoon. Deeply score into 8 wedges. Prick surface using tines of fork. Repeat steps with remaining disc of dough and another pie plate.
- Bake 35 minutes, or until golden brown. Remove to wire rack. Cool completely and cut into wedges.

- Heat oven to 400°F. Generously grease 9-inch glass pie plate with shortening or cooking spray. In medium bowl, mix brown sugar and cinnamon. Add apples; toss to coat. Set aside.
- In 2-quart saucepan, heat water and butter to boiling. Reduce heat to low. Add Bisquick mix; stir vigorously until mixture forms a ball. Remove from heat. Beat in eggs, one at a time; continue beating until smooth.
- Spread batter in bottom of pie plate. Arrange apples on top to within 1 inch of edge of pie plate.
- Bake about 23 minutes or until puffed and edges are golden brown. Serve immediately. Drizzle with syrup.

- Heat the oven to 180C/160C fan/gas 4. Butter and line a rectangular baking tin (approx 27 x 20cm) with baking parchment. Peel, core and thinly slice the apples, then squeeze over the lemon juice. Set aside.
- Put the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. Spread half the mixture into the prepared tin. Arrange half the apples over the top of the mixture, then repeat the layers. Sprinkle over the demerara sugar.
- Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of the tin and remove the paper. Cut into bars or squares.

- Preheat the oven to 425 degrees F.
- Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
- Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
- Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

I found this recipe on a site called Food for Tots. Looks baby friendly. A wonderful light egg soufflé that kids are sure to love and it's easy to make! Dutch babies also make a good dinner meal accompanied by Canadian Bacon or Ham and take less of the cook's time than regular pancakes.

- Preheat oven to 425°F Put butter into a 3 to 4 quart frying pan and place in oven to melt.
- While butter is melting, peel and core 2 medium apples, then cut them into thin slices.
- Remove the pan from the oven and add cinnamon and sugar to the melted butter.
- Stir in the sliced apples.
- Return pan to oven for about 3 minutes.
- Put the eggs and milk into a blender and whip at high speed for 1 minute.
- Set the blender to low speed and slowly add the flour until well blended.
- Remove the pan from oven and pour egg batter over the butter and apples.
- Bake for 20-25 minutes or until the pancake is raised and golden brown.
- Cut in wedges and dust with powdered sugar.
- Serve immediately.

- Preheat the oven to 325°F. (I don't use convection for this because it tends to brown too much). Liberally butter a 9" spring form pan.
- Combine the flour, granulated sugar, brown sugar, salt and lemon zest in a mixing bowl. With the mixer running, toss in the butter and mix until thoroughly combined. With the mixer running, add the egg and mix just until it forms wet crumbs.
- Dump the dough onto a lightly floured surface and knead together. Reserve 1/3 of the dough for the top of the tart. Roll the remaining 2/3 of the dough into a 16" round. Lift the dough onto the rolling pin and unroll over the pan. The dough will probably break apart but just piece it together to line the pan. If you find rolling this soft dough too difficult you can sprinkle the crumbs into the pan and press into place.
- Cut each apple into quarters and slice each quarter into 1/4 thick slices. Toss the sliced apples with the granulated sugar and the cinnamon. Sprinkle the bread crumbs into the bottom of the tart shell and then pour the apples over the bread crumbs. The pan will be about 2/3 - 3/4 full.
