CHEESE 'N RICE QUESADILLAS

Cheese 'N Rice Quesadillas image

Steps:

  • Bring water, spread, Knorr® Fiesta Sides™ - Mexican Rice and chilies to a boil in medium saucepan.
  • Reduce heat to low and simmer uncovered, stirring occasionally, until rice is tender, about 10 minutes. Let stand 10 minutes.
  • Place 5 tortillas on baking sheet. Top tortillas with rice mixture, then cheese and another tortilla.
  • Broil until tortillas are lightly toasted and cheese is melted, turning once.
  • Cut each quesadilla into 4 wedges and serve, if desired, with guacamole, sour cream and/or chopped fresh cilantro.

Steps:

  • Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
  • Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
  • Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

Easy rice and bean quesadilla image

Steps:

  • 1. Place water, the ketsup, all the spices and rice in a medium sauce pan. Bring to a boil, reduce heat and simmer 5 minutes with lid on. Turn off heat and let sit 5 minutes longer.
  • 2. Heat flour tortilla's for about 1 minute in micro. Spread beans on half the tortilla.
  • 3. Spread rice on top, sprinkle on cheese.
  • 4. Fold in half and brown both sides of tortilla in a skillet over med-high heat.

1 15 oz can refried beans (no fat) or leftover pinto beans, mashed
6 medium flour tortillas (wheat opt)
2 tsp shredded cheddar
RICE
1 1/2 c instant brown rice
1 1/2 c water
1/4 c ketsup
1 tsp cumin
1 tsp granulated garlic
1/2 tsp granulated onion
1/2 tsp black pepper
1/4 tsp coarse sea salt

Steps:

  • In a small bowl, mix beans, tomatoes and green onions. Spread half the tortillas with bean mixture. Sprinkle with cheese; top with remaining tortillas., Heat a griddle over medium heat. Place tortillas on griddle in batches. Cook until golden brown and cheese is melted, 2-3 minutes on each side. If desired, serve with sour cream and salsa.
