EASY 100% WHOLE WHEAT BREAD

This is a foolproof, beginner 100% whole wheat bread, easy to make with a stand mixer like a Kitchenaid®.

Easy 100% Whole Wheat Bread image

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
  • Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
  • Meanwhile, prepare a 9x5-inch loaf pan with parchment paper. Flour a surface to work the dough.
  • Place the dough onto the floured work surface and shape into a loaf. Use more flour if necessary. Place into the prepared loaf pan.
  • Let shaped dough sit in a warm place until it has risen over the top of the pan, about 1 hour.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until top of the loaf sounds hollow when tapped, about 35 minutes. Remove from the oven and let cool for 15 to 20 minutes before removing from the pan and transferring to a wire rack. Let cool an additional hour before slicing; otherwise it will feel doughy.

Steps:

  • Mix 9 cups wheat flour and apple cider vinegar in the large bowl. Add 5 cups warm water and the apple cider vinegar and mix well. Cover and allow set overnight or at least 12-24 hours. YOU will not taste the vinegar in this at all. Letting the bread sit breaks down the phytic acid and the bread is most wonderful and better for you. The bread dough will look dark when you uncover it to start the rest of the recipe. Don't freak out..it's fine. Now take 3/4 cup lukewarm water and add your yeast to it. Let sit 10 minutes until yeast is foamy. If it doesn't foam throw it out and retry. Add to flour mix. Then add in the salt, butter, honey, yogurt and vital wheat gluten. Mix well and knead for about 5 min. Adding in up to 15 cups of whole wheat flour as needed. It's messy but so worth it. Do not add to much flour..this dough should still be somewhat sticky to the touch when you are finished. Grease 4-yes 4 loaf pans and separate the dough into 4 equal parts. Place into the four pans and let rise for 45-50 min until the bread is rising over your pans. Oven needs to be at 350 degrees. Bake 35-40 min until tops are golden brown. You can brush the tops with melted butter if you like ( I don't). Freeze several loaves and eat up the other

  • After the soaking period is complete, combine the follow in a small bowl: – 1/2 cup warm water – 1 teaspoon honey – 2 1/2 tablespoons active dry yeastAllow the yeast to “proof,” i.e.: Get all fluffy and bubbly. Usually, this takes about 5 minutes.
  • After the yeast has proofed, add it to the soaked flour mixture. Mix, mix, mix. Then, add: – 1 1/2 tablespoons sea salt – 3 tablespoons dough enhancer (if you've got it!). I use 3 tablespoons of vital wheat gluten instead. Is the dough too sticky? Add just enough flour that the dough begins to pull of the sides of your mixer. Don't add too much!
  • Knead, baby, knead! Use your muscles! For about 10 minutes. If you need to sprinkle in a wee more flour to make the dough manageable, feel free to do so. After kneading the dough, place it in a greased bowl, cover, and let sit until doubled (usually about an hour or so). Punch the dough, turn it over, and allow it to rise again until doubled (thirty minutes or so). I know this step may seem tedious, put really, it's pretty dang passive. All you have to do is keep an eye on it. And punch it. And flip it.
