EASY SOFT FRENCH BREAD

My aunt has been making this bread forever. This is easy to make and requires ingredients that are often on hand. It is incredibly delicious!!!

Easy Soft French Bread image

Steps:

  • Add sugar, warm water, then yeast into mixing bowl. Let yeast prove.
  • Add rest of ingredients, kneading while adding flour one or two cups at a time.
  • Knead for 5 minutes.
  • Let the dough rise for 1 hour, until doubled.
  • Knead the dough down.
  • Split into two sections.
  • Using rolling pin, one at a time flatten each section into a large rectangle (about 17"x 9").
  • Roll the dough up to make a long loaf. Pinch the seam closed and turn the ends under.
  • Place the two loaves on separate large cookie sheets, seams down (I lay it diagonally), cover with a light dishtowel, and let rise another hour.
  • Bake at 350 degrees for 30 minutes.

QUICK FRENCH BREAD

This is seriously one of the best loaves of French bread I've EVER made - and we bake bread a lot at our house!! AAAANNNND it's super simple and quick! Crusty outside, chewy inside. Especially yummy fresh!!!

Quick French Bread image

Steps:

  • Add the yeast to the water in a medium-large bowl, then sprinkle the sugar over the top of it.
  • Let it sit for five minutes or so, or until the yeast mixture looks frothy on top.
  • Stir in the salt, oil, and flour.
  • Put a bowl of water in the microwave and heat it for a couple of minutes.
  • Knead the dough until it's smooth, and comes away from the sides of the bowl easily. Add a bit more flour if it's sticky.
  • Remove the water from the microwave and put in the dough. Let the dough rise in the microwave, door closed, for 15-30 minutes, until dough is almost doubled in size. (it was only about 1 1/2 times bigger for me, and was awesome!).
  • Now remove the dough and divide into two equal balls. Roll into rectangles, and then roll up, jelly roll style. Place both loaves next to each other ion lightly greased cookie sheet. Cover and let rise while you heat your oven to 375 degrees. Bake both loaves for 30-35 minutes, until golden brown.
  • EAT!

  • Add warm water, sugar, and yeast to the bowl of a bosch mixer or kitchen aid with the dough attachment. Make sure the water is warm/room temperature and not too hot to avoid killing the yeast. Let proof for about 10 minutes until bubbly.
  • Add olive oil, salt, and 3 cups of flour. Mix well. Continue to add flour until the dough begins to pull away from the side of the bowl. The dough should be soft and slightly sticky, but should hold it's shape. You may not use all of the flour called for.
  • Once the dough has the correct amount of flour, continue to mix and knead for 5-7 minutes on medium speed. The dough should spring back when "poked" when it is finished kneading.
  • Place Dough in a large bowl sprayed with cooking spray. Cover with a towel and let rise in a warm place until approximately doubled in size. This usually takes ~45 minutes but will vary.

  • In a large mixing bowl, add 1/2 cup of the warm water and sprinkle the yeast on top. Let set for about 5 minutes or until yeast has dissolved. Add in the sugar, salt, melted butter and remaining water and stir until blended. Lastly, add in the flour until mixture is relatively smooth. The dough will look very shaggy at first and you may want to knead by hand to bring everything together which should only take about a minute or so. Once the dough is mostly smooth (still okay to have some shaggy bits as you do not want to overwork it), place the dough ball back into the bowl and cover with a dish towel. Let rise in a warm, draft-free place for about 1 hour or until doubled in size.
  • Punch down the dough and turn it onto a floured work surface. Using a bench scraper or sharp knife, cut dough in half. Cover and let rest for about 10 minutes.
  • Roll each dough portion one at a time into an approximate 10x8 inch rectangle shape. Roll the dough up jelly-roll style (almost like you're making cinnamon rolls) starting with the long side closest to you, pinching the seam to seal. Place the loaves on a parchment lined baking sheet, seam side down. Cover and let proof/rise until almost doubled in size, about 45 minutes.
  • Preheat oven to 400 degrees F. With a sharp serrated knife, make three or four diagonal cuts in the top of the loaf. Bake for 20-30 minutes or until lightly browned. Cool on wire racks until warm to the touch or room temperature. Store any leftovers in an airtight container at room temperature. Can also be frozen for up to 1 month; thaw before serving.
