GREAT EASY WAFFLES
This recipe has been handed down in my family and has become a favorite. If you have leftover waffles, they are great to freeze and then toast at a later time. I usually make a double recipe and then have plenty of leftovers for the kids to have for breakfast before school.

Steps:
- Preheat a waffle iron according to manufacturer's instructions.
- Whisk the flour, baking powder, sugar, and salt together in a mixing bowl; set aside. Beat egg whites until foamy in a separate large glass or metal mixing bowl. Whisk the egg yolks, lemon zest, and vanilla extract together in a third bowl; whisk in the milk. Stir in the flour mixture until smooth. Fold in the melted butter and then the beaten egg whites until just incorporated.
- Cook the waffles according to manufacturer's instructions until golden brown.

- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
WAFFLES I
You can keep the batter covered in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe.

EASY YUMMY WAFFLES
Pillsbury discontinued their frozen waffles, and none of the others on the market have that nice vanilla flavor. So, I came up with my own, very easy version! The added sugar and vanilla make these yummy. They smell like waffle cones when they cook!

- Beat eggs and vanilla with milk in small bowl.
- Mix sugar with baking mix in large mixing bowl.
- Add milk/egg to dry ingredients. Stir till mixed well.
- Ladle about 1/3 cups of batter into each well of the pre heated waffle iron. Enough to cover the grids. Close waffle iron and cook for about 5 minutes, or until golden brown.
