BERRY EYEBALL PUNCH

Berry Eyeball Punch image

Steps:

  • Puree the blackberries, lychee syrup and lemon juice in a blender. Strain through a fine-mesh sieve into a pitcher, pressing on the solids with a rubber spatula. Add the acai juice and blueberry juice. Refrigerate until chilled, at least 2 hours.
  • Gently push a blueberry into the cavity of each lychee. Transfer the punch to a punch bowl or pitcher and add the stuffed lychees, then gently stir in the lemon-lime soda and rum, if using. Serve over ice.

3 cups blackberries
18 canned lychees (from one 20-ounce can), plus 3/4 cup syrup from the can
1/4 cup fresh lemon juice
2 cups sweetened acai juice
1 cup blueberry juice cocktail
18 large blueberries
3 cups lemon-lime soda
1 cup spiced rum or gin (optional)

STUFFED MUSHROOM EYEBALLS

All eyes on this spooky Halloween appetizer! These mushrooms are packed with a garlic-cream cheese filling and topped with sun-dried tomato strips and sliced black olives. The key is to really scoop out the mushrooms and not overfill the caps for a festive snack worth a second look.

Stuffed Mushroom Eyeballs image

Steps:

  • Preheat the oven to 400 degrees F; line 2 baking sheets with parchment.
  • Remove the stems from the mushrooms and reserve for another use. Use a melon baller or 1/4-teaspoon measuring spoon to scoop out any remaining stems and gills from inside the mushroom caps. You want to create a large enough cavity to fit 1 1/2 to 2 teaspoons of filling.
  • Combine the cream cheese, Cheddar, garlic, 1/4 teaspoon salt and a few grinds of white pepper in a large bowl. Transfer the mixture to a piping bag.
  • Arrange the mushroom caps on the prepared baking sheets. Pipe 1 1/2 to 2 teaspoons of the filling into each mushroom cavity and smooth the tops with a small offset spatula. (The filling will rise as it bakes, so it should not be higher than the opening of the mushroom cavity.)
  • Cut the sun-dried tomatoes into thin strips, trimming as needed to fit the mushrooms. Top each mushroom with a few strips (they look more like veins if you scrunch them before placing them on the filling). Place an olive slice in the center of each mushroom and press into the filling to adhere.
  • Bake until the mushrooms are tender and the filling has risen slightly, 15 to 17 minutes. (If any of the olives slide during baking, move them back into place when they come out of the oven.) Let cool slightly before serving.

1 cup shredded sharp white Cheddar (about 2 ounces)

Steps:

  • In a small bowl, cream peanut butter and butter until light and fluffy. Beat in vanilla. Gradually beat in confectioners' sugar. Shape into 1-in. balls. Cover and refrigerate for at least 30 minutes. , In a microwave-safe bowl, melt candy coating and shortening; stir until smooth. Dip peanut butter balls into coating; allow excess to drip off. Place on waxed paper. Place M&M's, plain side up, on top. Let stand until set. Use red gel to create "bloodshot" eyes.

  • In a small bowl, combine 1 cup confectioners' sugar, peanut butter and butter. Shape into 1-in. balls; place on a waxed paper-lined pan. Chill for 30 minutes or until firm. , In a microwave, melt white candy coating; stir until smooth. Dip balls in coating; allow excess to drip off. Place on waxed paper. Immediately press a Reese's candy onto the top of each eyeball for pupil. Let stand for 30 minutes or until set. , In a small bowl, combine the water, food coloring and remaining confectioners' sugar. Transfer to a heavy-duty resealable plastic bag; cut a small hole in a corner of bag. Pipe wavy lines downward from pupil, creating the look of bloodshot eyes. Store in an airtight container.

Steps:

  • Combine one package of gelatin with the milk and bloom for five minutes.
  • In a small saucepan, combine half a cup of water with the sugar and coconut extract and bring to a boil. Combine with the gelatin mixture and stir until all solids dissolve. Lubricate molds with oil and pour in gelatin mixture. Refrigerate for one hour. Gently tap and shake to unmold.
  • For the iris, combine remaining gelatin with 1/4 cup of water and bloom for five minutes. In a small saucepan, bring the remaining water to a boil. Remove and gently stir into gelatin mixture until solids dissolve. Create the colors of your choice using the food coloring kit. Using an eyedropper, fill the indentation of the eyeballs with the colored gelatin. It will set within moments of contact with the cold gelatin.
  • In a small ramekin, mix one drop of each color to create black for the pupil. Dip a toothpick into the black and paint the center of the iris. To achieve bloodshot eyes, use red food coloring and brush with a cotton swab around the base of each eyeball.

Steps:

  • Cream the butter and peanut butter together.
  • Beat in the vanilla and sugar.
  • Chill for 1/2 hour.
  • Roll into small balls, chill on wax paper for another 1/2 hour.
  • In a microwave, melt the white dipping chocolate.
  • Using two spoons dip the eyeballs into the white chocolate.
  • Let cool on waxed paper until firm. Chilling will speed up the process.
  • Pour a drop or two of blue food coloring into the remaining melted chocolate.
  • Make a round iris on the eyeball, and immediately press a miniature chocolate chip in the center for a pupil, doing 5 at at time.
  • For the bloodshot effect, dip the tiny end of a toothpick in red food colouring and squiggle the lines from the pupil outward, but not quite to the edges of the ball.
  • These are quite tasty--considering how creepy they are.
  • Note: White dipping chocolate is also known as white bark.

  • In order for the eyes to end up flat, we are going to do the "wet on wet" technique. This means that as soon as you put a dot of white (or a couple), you put a dot of black right on top, before it dries at all. The key is to have the right consistency of icing. I used about a 7 second icing for these. (For clarification on that, see post mentioned above.) If you wait for the white to dry, you will have more 3D looking eyes.
  • You can make different style eyes by taking a toothpick and dragging the icing out a little, then put the black dot on.
  • All of your eyes will need to dry a full 24 hours before they pop right off your parchment paper. Then you can just stash them in a zip-loc bag until you need them.
