Bread Pudding (Best Ever) image

Steps:

  • Heat oven to 350.
  • Cube rolls into 1 inch pieces.
  • In a saucepan, heat milk, butter, but don't allow to boil.
  • When cooled, add vanilla, beaten eggs, sugar and baking powder.
  • Blend until smooth.
  • Spray 9X13 baking dish with Pam, layer the bread cubes and pour the liquid all over, making sure the bread is well saturated.
  • Sprinkle brown sugar topping all over the bread and cover with pecans.
  • If you prefer, sprinkle top with cinnamon and raisins.
  • Bake for about 30 to 35 minutes, until top is brown and looks crusty.
  • Serve warm with cream.

Steps:

  • Mix in a large saucepan the milk, sugar, 5 eggs, vanilla, margarine, salt, cinnamon and raisins (optional). Heat until margarine is melted. Pour over 1 1/2 loaves of bread that has been torn into small pieces and placed in 13x9 inch baking dish. Place a pan of water below bread pudding in oven. Bake for 40 to 45 minutes at 350 degrees.
  • Cook the sauce ingredients in medium saucepan; until thick. Pour over bread mixture after it has been baked.

When I was a child I would hear fantastic stories from my grandparents of the gingerbread houses back in Germany. My love for gingerbread and the centuries-old tradition of celebrating with it led to my modern take on bread pudding.

Steps:

  • Preheat the oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray.
  • Add the cubed gingerbread and panettone to a large bowl and set aside. In another large bowl, whisk together the eggs, milk, syrup, cinnamon, salt, vanilla and raisins. Slowly stir in the eau de vie. Pour the liquid over the bread mixture and toss to coat thoroughly.
  • Pour the gingerbread mixture into the prepared pan, making sure to press down and form an even layer. Bake until a utensil inserted in the middle comes out clean, about 45 minutes.
  • Remove from the oven and let cool for 10 minutes. Spoon onto a serving dish and garnish with a dollop of whipped cream.
