FUNKY FRIED CHICKEN

Funky Fried Chicken image

Steps:

  • In a large skillet, add canola oil over medium heat.
  • In a small bowl, mix together all spices. Use 1/2 of mix to season chicken. Let seasoned chicken sit at room temperature for 15 minutes.
  • In a large bowl, add flour and remaining seasoning mix. Toss chicken with seasoned flour and add to hot oil, 1 piece at a time. Cover pan with foil. Remove foil after 8 to 10 minutes and flip chicken. Cook until the chicken is golden brown. Remove from fryer to a paper towel-lined sheet tray. Season with salt, if desired, and serve.

2 tablespoons granulated garlic
2 tablespoons granulated onion
2 tablespoons kosher salt, plus additional for seasoning
2 tablespoons freshly ground black pepper
1 tablespoon cayenne
1 tablespoon paprika
2 (3 1/2-pound) whole chickens, cut into 10 pieces each and trimmed of fat
4 cups all-purpose flour

Steps:

  • preheat oven to 450.
  • wash and dry chicken.
  • rub inside and out of chicken with salt, pepper and oil.
  • rub inside and out of chicken with pepper relish.
  • cut lemon in half and place in cavity.
  • separate skin from chicken by gently pulling apart and rub relish in between the layers.
  • replace skin to seal in juices.
  • roast chicken on rack at 450 for 1 hour 20 mins, uncovered.
  • Remove chicken and let sit, uncovered, for at least 30 mins.
  • carve and serve.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line the bottom and sides of a 9x13-inch casserole dish with tortillas.
  • Heat oil in a large skillet over medium heat. Add chicken and season with cumin, taco seasoning, and cayenne. Stir in onion and garlic and cook until chicken is browned, about 5 minutes. Add bell peppers; cook and stir for another 5 minutes. Mix in black beans, kidney beans, and corn.
  • Remove from the heat and pour mixture into the prepared casserole dish. Top with cilantro and pepper Jack cheese.
  • Bake in the preheated oven until cheese starts to brown on top, 25 to 30 minutes. Remove from the oven and let stand for 10 minutes before serving.

Steps:

  • -Pan fry bacon, set aside.
  • -Prepare chicken as you like it. I use a George Foreman grill.
  • -While chicken is cooking, butter the pan and the bread. Assemble tomatoes and cheese on bread, and cook like a grilled cheese sandwich.
  • -Add chicken, bacon and mayonnaise, and enjoy!

2 boneless skinless chicken breasts, Italian style (marinated in Italian dressing)

I just threw this together right now--yes, right now. I have next-to-nothing right now, so I just made it up and was actually surprised by the result. I just heated up some frozen veggies, and made some plain white fluffy rice to eat with this. Voila! Dinner is ready!   • Preheat oven to 350°F.
  • In a baking dish, place all the ingredients together (place the chicken in the dish first.I truly believe doing this and adding everything right on top of it is what gave me such a nice crispy exterior).
  • This is the fun part, where you really get your hands dirty. Mix everything together, making sure the honey is well dissolved.
  • Place in the oven for 30-40 minutes, brushing the chicken with the honey mixture about every 10 minutes.

This has to be one of the most amazing chicken dishes I have ever made or eaten. It's really scary to watch people just attack this dish and practically inhale it in one breath. Brush up on your Heimlich Maneuver, people do get a little over-enthusiastic over this. Prep time includes marinating time.

Funky Chicken With Sesame Noodles image

Steps:

  • First make the sesame noodles: Cook the spaghetti according to package directions.
  • Drain (I also rinse).
  • In a jar, add the soy sauce, sesame oil and the sugar.
  • Shake until well blended and the sugar has dissolved.
  • Pour this over the pasta.
  • Toss with scallions and sprinkle with the sesame seeds.
  • Set aside while you marinate and then cook the chicken.
  • Funkying the chicken: In a bowl mix the soy sauce, teriyaki sauce, garlic, brown sugar and the ginger.
  • Make sure the sugar has pretty much dissolved.
  • Add the chicken, making sure it's all coated with the sauce.
  • Cover and stick in the fridge for 2-3 hours.
  • Remove the chicken from the marinade, and toss out the marinade left at the bottom of the bowl.
  • Heat the sesame oil in a large non-stick pan.
  • Add the chicken in batches and saute for about 10 minutes, or until done, adding more sesame oil as needed.
  • Remove the chicken from the pan and let cool slightly.
  • Slice the chicken diagonally into thin strips.
  • Serve the chicken over the sesame noodles.
  • Stand back and watch your guests/children/loved ones inhale this dish.

1 lb spaghettini (get the thinnest spaghetti you can find)
1/2 cup soy sauce
1/4 cup sesame oil (some reviewers have said that 1/2 cup of oil is too much and have halved the amount, so use your own)
1/3 cup sugar
3 scallions, thinly sliced
1/4 cup sesame seeds (or more)
1/4 cup soy sauce
1/4 cup teriyaki sauce
2 garlic cloves, minced
1/4 cup brown sugar
1 teaspoon fresh ginger, chopped (or 1/4 teaspoon dried)
4 boneless skinless chicken breasts
sesame oil, for sauteing
