FERAKH BEL TAMATEM

This is a quick and simple way of cooking chicken.

Steps:

  • Heat the butter with the oil in a skillet. Put in the chicken breasts, season with salt and pepper, and brown them lightly on both sides.
  • Add the garlic, tomatoes, sugar, and cinnamon. Cook for 15-20 minutes, or until the chicken is done but still juicy.

1 tablespoon butter
1 tablespoon sunflower or vegetable oil
4 boned chicken breast halves, with or without skin
Salt and pepper
4 cloves garlic, crushed
1 pound tomatoes, peeled and cut into small pieces
1-2 teaspoons sugar
1/2 teaspoon cinnamon

Tomatoes are banadoura in Arabic and tamatem in Egypt.

Steps:

  • Put the tomatoes in a bowl with the onions and parsley or cilantro. Dress with a mixture of oil and vinegar or lemon juice with salt and pepper and cumin, if using.

1 pound firm ripe tomatoes, sliced
1 red Italian or large mild onion or 5 scallions, chopped
2 tablespoons chopped parsley or cilantro
3 tablespoons extra-virgin olive oil
1 tablespoon wine vinegar or the juice of 1/2 lemon
Salt and pepper
1/2 teaspoon ground cumin (optional)

Egyptian Style Fatah (Rice, Meat, Crispy Bread, Vinegar, Garlic) image

Steps:

  • Put pita bread in the oven for 3 minutes till it becomes crispy.
  • Break into bite size pieces, put in a glass baking dish.
  • Pour the soup (about 1 cup) from the boiled meat in the baking dish over the crispy bread.
  • Add the cooked rice over the bread.
  • Sprinkle a lot of black pepper over the rice.
  • In a frying pan cut the garlic into small pieces fry with oil till it is golden; add the vinegar (this will smell very good).
  • Take the mix. of vinegar and garlic pour over the rice.
  • Place the meat over the rice.
  • Serve hot and enjoy.
