PAN-FRIED T-BONE STEAK

Steps:
- About 1/2 hour before cooking the steak, bring it to room temperature.
- Preheat a large cast iron skillet over medium heat. Lightly brush the steak all over with oil and season generously with salt and pepper. Raise the heat to high, add the steak and cook, turning once, until well browned, about 7 minutes for the first side, and 4 minutes on the second side, for medium-rare. Hold the steak with tongs and sear the edges. (An instant-read thermometer inserted perpendicularly into the steak registers 125 degrees F for medium rare.)
- Transfer the steak to cutting board and cover loosely with foil. Let rest for 5 minutes.
- Cut the tenderloin and strip from the bone, and slice against the grain. Transfer to a serving platter and serve au natural, with mustard, compound butter, or horseradish sauce.

While looking through my newest Simple and Delicious Magazine, I found like yummy sounding recipe for T-Bone Steaks!! It is made with ingredients I always have on hand and it is a short marinating time!! Preparation time doesn't include marinating time.

GRILLED T-BONES WITH CHIPOTLE-LIME BUTTER

- In a small bowl, combine the butter, chipotle, lime zest and juice, and 1 teaspoon salt. Mash with a spoon until smooth. Mound the mixture onto a square of plastic wrap, form into a log shape about 6 inches long, and roll up in the plastic; twist the ends of the plastic tightly to seal. Refrigerate until firm, about 1 hour.
- Prepare a grill for high-heat cooking. Rub some oil onto the steaks and sprinkle with salt and pepper. Brush the grill grate with oil. Grill the steaks, turning once, until an instant-read thermometer inserted horizontally in the meat but not touching the bone registers 130 degrees F for medium-rare, about 8 minutes per side. Transfer the steaks to a cutting board and allow to rest 10 minutes. Slice the steaks and divide among plates; top each serving with a slice of the chipotle butter.
GRILLED T-BONE STEAKS
This is an excellent marinade for any steak. The flavor is just wonderful. Our T-bones came out perfect. Very tender with a wonderful flavor. The original recipe is from TOH with some changes to suit our taste. Prep time does not include the time it takes to marinate the steaks.

- Refrigerate overnight, turning as often as you can. (I actually marinated my for a day and a 1/2.).
- Drain and discard marinade.
- Grill steaks, over high heat for about 5 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees, medium, 160 degrees, well-done 170 degrees).

FIERY HOT TEXAS T-BONES WITH CHIPOTLE SMASHED POTATOES AND HOT AND SWEET PEPPER SAUTE

- Seed and slice the hot and sweet fresh peppers and reserve.
- Cover potatoes with water and bring to a boil. Add salt to boiling water. Cook potatoes until tender, 10-12 minutes. Chop and brown bacon in a small skillet and add a tablespoon of chipotle powder and onions. Cook 5 minutes over medium heat until onions are tender. When potatoes are tender, drain and return to hot pot. Add bacon mixture and sour cream to the potatoes. Smash potatoes and season with salt, to taste.
- While potatoes are working, combine dry spice rub: chili powder, remaining chipotle powder, cumin and grill seasoning. Rub steaks liberally on both sides with the mixture. Heat a 12 to14-inch skillet screaming hot. Add 2 tablespoons of vegetable oil, 2 turns of the pan. It will smoke. Add steaks and do not turn for 6 minutes. Flip and cook another 6 minutes for medium rare, up to 10 minutes for well done. Remove skillet from flame and add bourbon. Return steaks to stove and flame the pan. When the fire goes out, transfer the meat to a large serving platter and pour pan juices over the top. Let meat rest for juices to redistribute. Return pan to heat and add remaining tablespoon vegetable oil to the skillet. Add hot and sweet peppers to the pan and saute them for 5 minutes. Season with salt and pile peppers alongside steaks.
- Remove meat from the T bones and cut into 4 portions. Top with some peppers and pile some chipotle smashers along side. Spoon drippings and juices over meat and serve.

LODGE SALAD LIKE SMOKEY BONES
This is my favorite thing to order at Smokey Bones, a place popular for BBQ and watching sports. Darden Restaurants closed a lot of the locations and sold the rest to another company in 2008. This is my own copycat version of the salad, not an official restaurant recipe. This is very filling even as a vegetarian salad without the chicken or shrimp; at Smokey Bones they give you an unrealistically huge portion - making this recipe only serve four. Use any dressing you like; I really love Recipe#318828 however it's not an exact replicate of Smokey Bones' dressing.

- Boil potatoes until soft.
- Slip peels off and cube potatoes.
- Salt and pepper potatoes to taste.
- Fry bacon until crisp, saving bacon grease.
- Crumble bacon and set aside.
- Brown cubed potatoes in bacon grease and set aside.
- Pour bottle of Ranch Dressing onto an oven safe platter.
- Pile potatoes on top of dressing.

- Preheat oven to 250 degrees F.
- Beat the egg whites until stiff, starting on a low speed and gradually on a higher speed.
- Then start adding the sugar, a tablespoon at the time, keep beating until you have a thick and glossy meringue.
- Line baking trays with paper.
- Using a piping bag with a plain nozzle, pipe a straight meringue bone/line of approx 4 inch long, pipe 2 meringue balls at each end of the bone/line.
