A.1. Original Sauce Recipe Contest Entry. Baked Chicken in a rich tangy sweet sauce bursting with flavors. I like to serve this as I would baked ham with potato salad and green beens.

Steps:

  • Heat oven to 350.
  • Mix first 4 ingredients in a large bowl.
  • Remove skin from chicken thighs and toss in bowl coating chicken well with mixture.
  • Place chicken in a glass baking pan and cover with aluminum foil.
  • Bake 40 minutes covered and remove foil for last 5 minutes.

Steps:

  • Combine Mayo, A1 Sauce, Prepared mustard and seasoned salt in a large bowl.
  • Add chicken, make sure the chicken is covered in the sauce.
  • Place marinated chicken in the fridge for at least one hour.
  • Heat grill to 325.
  • Place your chicken thighs on the grill.
  • Close the grill.
  • For optimal grilling make sure not to open the grill to much.
  • After 20 minutes flip the chicken let it cook for a additional 20.

I was fumbling in the fridge and asked DH what he liked better A-1 or Heinz 57. He said A-1 so that is what I did, the seasonings are guesstimated, adjust to your tastes.

Steps:

  • Season the leg quarters with the pepper, garlic powder and italian seasoning to your taste.
  • Place in Casserole dish and ALMOST cover with beer.
  • Spread the A-1 sauce on top of the Chicken.
  • Bake at 375 for 45 minutes then take dish from oven and drain the juices. Leave enough juice in bottom of casserole dish to cover the bottom about 1/2 inch.
  • Turn chicken over and spread more A-1 on top of quarters.
  • Bake an additional 20-30 minutes at 400.

Steps:

  • Season chicken thighs with salt and pepper. Brown well on both sides.
  • Remove from pan. Drain all but 1 tbls of oil.
  • Sautee garlic and shallots until fragrant- approx 2 minutes. Add hot pepper.
  • Add in brown sugar and 4 oz figs, stirring to combine. (reserve ½ oz figs for top).
  • Add Madeira wine, scraping any brown bits from bottom. Add in chicken broth, Chicken stock concentrate and A1 sauce.
  • Reduce for 10 minutes on med high heat.
  • Add in rosemary, oregano and 1 cup tomatoes.
  • Add back chicken turning to coat in sauce. (should be skin side up).
  • Simmer covered for 40minutes.
  • Remove chicken to serving platter.
  • Reduce heat to low.
  • Add goat cheese, whisking well or use immersion hand held blender, Blend until sauce is smooth.
  • Spoon desired amount over chicken on platter.
  • Top with chopped figs and ½ cup sliced tomatoes.
  • Bon Appetite!
