FINGER LICKEN' GOOD CAKE (PIG LICKIN' CAKE)
I wrote in to ask for this recipes, but no one knew it. Well, I found it, and I thought I would share it with you. Very Moist Cake.

Steps:
- 1. Place a rack in the center of the oven and preheat the oven to 350oF. grease two 9-inch round cake pans.
- 2. Place the cake mix,mandarin oranges, and juice(from pineapple),melted butter,oil,and eggs,in a large mixing bowl. Blend with mixer for about 1min. Stop to scrape down the sides of the bowl. Increase speed to medium and beat 2 to 3mins more. Batter should look well blended and the oranges should be broken up in the batter.
- 3. Divide the batter between the prepared pans, smoothing is out with spatula.
- 4. Bake until golden brown and spring back when lightly pressed with your finger, 24 to 27 mins.
- 5. Remove pans and place on wire racks to cool for 10 mins. Run knife around edge on pan,evert onto rack, then evert them again, so that cakes are right side up.
- 6. While cakes are still warm, poke holes in the top of each layer with a toothpick or wooden skewer. Pour the pineapple juice over the layers so that the cake soaks up all the juice. Let cool for 30 mins.
- 7. Prepare frosting: Place the thawed whipped topping, pudding mix. coconut, and the drained crushed pineapple in a large mixing bowl. Stir with a wooden spoon until well combined and the pudding mix has dissolved.
- 8. place one cake layer,right side up,on serving plate. Spread the top with frosting. Place the second layer, right side up, on top of the first layer and frost the top and sides of the cake with clean. smooth strokes.
- 9. Store this cake, lightly covered in waxed paper, in the refrigerator for up to 1 week.

- For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
- Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.
- For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
- Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

- Combine cake mix, oranges, eggs and oil. Stir until everything is well incorporated. Pour into greased and floured cake pan. Bake as directed on cake mix box. Mix pineapple, pudding, and whipped topping together and spread on cooled cake. Store leftovers in the refrigerator.

- 1. Spray a 9x13 in. pan with bakers secret. Mix cake mix with oil. eggs, and mandarin oranges. Pour into pan. Bake at 350 for 30min. or until toothpick comes out clean. Let cool.
- 2. In a separate bowl mix pudding with crushed pineapples until smooth. Fold in whiped cream. Spread on cake. Refrigerate until icing is firm then serve.

- Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter into three greased and floured 8 inch round pans. Layers will be thin.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool layers on wire racks.
- Mix together whipped topping, drained pineapple, and instant pudding mix. Fill and frost the cooled cake. Refrigerate until ready to eat.
