ORANGE FIVE-SPICE ROASTED CHICKEN

Another low-carb recipe from one of my cookbooks. A nice combination of Asian and orange flavors. Have not tried this yet, but plan to soon.

Orange Five-Spice Roasted Chicken image

Steps:

  • Place the chicken in a large zip-lock bag. Mix all other ingredients together and pour over chicken. Seal the bag, pressing out the air as you go. Turn the bag to coat, and place it in the refrigerator. Let sit for at least 2 hours, longer is fine.
  • Preheat oven to 375 degrees F. Place the chicken in a baking pan; reserving marinade in a small bowl. Roast chicken for 1 hour, basting 2-3 times with the reserved marinade.

3 lbs chicken thighs
1/4 cup soy sauce
2 tablespoons canola oil (or peanut oil)
1 tablespoon lemon juice
1 tablespoon rice wine vinegar
1 tablespoon Splenda sugar substitute
2 tablespoons low-sugar orange marmalade
2 teaspoons five-spice powder

Five Spice Chicken and Orange Salad image

Steps:

  • Preheat oven to 450 degrees F.
  • Combine 1 teaspoon oil, five-spice powder, 1/2 teaspoon salt and 1/2 teaspoon pepper in a small bowl.
  • Rub the mixture into both sides of the chicken breasts.
  • Heat 1 teaspoon oil in a large ovenproof nonstick skillet over medium-high heat.
  • Add chicken breasts; cook until browned on one side, 3 to 5 minutes. Turn them over and transfer the pan to the oven.
  • Roast until the chicken is just cooked through (6- 8 minutes or until an instant read thermometer reads 165*F).
  • Transfer the chicken to a cutting board; let rest for 5 minutes (it will finish cooking as it rests).
  • Meanwhile, peel and segment two of the oranges collecting segments and any juice in a large bowl.
  • Discard membranes, pith and skin.
  • Add the greens, bell pepper and onion to the bowl.
  • Zest and juice the remaining orange.
  • Place the zest and juice in a small bowl; whisk in vinegar, mustard, the remaining 4 teaspoons oil, remaining 1/2 teaspoon salt and freshly ground pepper to taste.
  • Pour the dressing over the salad; toss to combine.
  • Slice the chicken and serve on the salad.

Steps:

  • In a small bowl, combine the first five ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the grill for 5-7 minutes on each side or until a thermometer reads 170°, basting frequently with reserved marinade.

  • In a bowl, combine the chicken, celery, green pepper and onion. Add mayonnaise, orange juice and zest and salt; mix well. Cover and refrigerate until serving. Serve on lettuce if desired.

Steps:

  • Score the skin side of each piece of chicken 2 to 3 times, about 1/8 inch deep.
  • Whisk together the the juice of 1/2 lime, 1 tablespoon fish sauce, garlic, 1 tablespoon rice vinegar, Chinese five-spice powder, 2 teaspoons hot chile paste, ginger, and soy sauce in a bowl. Pour into a resealable plastic bag. Add chicken, coat evenly with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator for 6 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove chicken halves from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Reserve marinade mixture in a small bowl.
  • Whisk together the 1/3 cup rice vinegar, juice of 1/2 lime, 1 teaspoon fish sauce, and 1 teaspoon hot chile paste in a small bowl. Set aside.
  • Grill chicken, skin-side down, on the preheated grill for 2 minutes. Turn each piece, brush with reserved marinade mixture, and move to indirect heat.
  • Grill, brushing with glaze and turning ever 10-15 minutes, until well-browned and meat is no longer pink in the center, about 45 minutes total. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 180 degrees F (82 degrees C).
  • Drizzle vinegar lime juice mixture over the chicken and serve.

  • Combine the soy sauce, salt, five spice, red onion, garlic, oil, shaoxing wine (or sherry), and sesame oil in a mixing bowl and set aside. Pat the chicken dry and add it to the marinade, making sure to get the marinade under the skin of the chicken. Marinate overnight or at least 20 minutes.
  • Preheat oven to 375 degrees F (190 degrees C) and line a sheet pan with non-stick foil or parchment paper. Place the chicken on the pan and roast for 35-40 minutes.
  • If the chicken has not crisped up in that time, turn on the broiler for a few minutes, but don't walk away while this is happening, or they may burn!
  • The chicken is cooked through when you stick a fork in the side and the juices run clear. Serve with steamed rice and a vegetable for a complete dinner!

  • 1. Insert a meat hook in the neck of the chicken and hold over a large tray. Ladle hot water over the chicken to shrink the skin, this will help it to crisp. Pat the chicken dry with paper towels. Mix all the ingredients for the spice rub in a small bowl. Rub the chicken with oil and then the spice mix. Stuff the inside of the bird with the spring onions, ginger, star anise and orange peel.
  • 2. Heat the oven to 350°F, roast the chicken for 1 ½ hours (depending on the size of the bird). Combine all ingredients for the basting liquid in a small bowl and stir until the agave is fully dissolved. In the last 20 minutes of roasting, brush the basting liquid lightly over the chicken.
  • 3. Prepare the Chinese "salsa verde" dressing. Combine all ingredients in a small serving bowl and set aside.
  • 4. Remove the chicken from the oven. Check if it is cooked by inserting a meat skewer in the thickest part of the thigh and if the juices are clear then the meat is cooked (or reaches 165°F on an instant-read thermometer). Let it rest for about 20 minutes. Carve and serve with the Chinese "salsa verde" sauce.
