CHOCOLATE-TOPPED MARSHMALLOW STICKS

- In a microwave, melt chocolate chips and 2 teaspoons shortening; stir until smooth., Insert one lollipop stick into each marshmallow. Dip marshmallows in melted chocolate, turning to coat; allow excess to drip off. Place on waxed paper., In a microwave, melt white baking chips with remaining shortening; drizzle over chocolate. Decorate with toppings if desired. Let stand until set., Use to stir servings of hot cocoa. Store in an airtight container.

S'MORES ON A STICK
Steps:
- Line a baking sheet with parchment paper. Place the graham cracker crumbs in a shallow dish and set aside. Spear the marshmallows with the cocktail picks.
- Melt the chocolate chips in a double boiler over medium heat, stirring occasionally. Dip the marshmallow sticks in the chocolate, one at a time, and let any excess drip off. Roll in the graham cracker crumbs and place on the prepared baking sheet. Serve immediately. Or if you'd like the chocolate to set, refrigerate about 1 hour before serving.
- Line a baking sheet or dish with parchment paper. Stir the gelatin into 1/3 cup water.
- Place the granulated sugar, 1/3 cup water and corn syrup in a small saucepan over medium-high heat. Bring to a boil, stirring, and cook until the sugar dissolves and the temperature reaches 240 degrees F. Carefully pour the sugar mixture into the gelatin mixture, stirring constantly. Let sit for 5 minutes.
- Using an electric mixer, whip the egg whites until soft peaks form. With the mixer on medium-low speed, pour the sugar-gelatin mixture into the egg whites in a slow, steady stream. Continue whipping until stiff peaks form. Pour the mixture into 8-by-8-inch baking sheet or dish and refrigerate until stiffened, about 3 hours.
- Turn the marshmallow out onto a surface sprinkled with powdered sugar; peel off the parchment. Cut into 4 cubes and insert a bamboo stick into each.

Steps:
- Stir together powdered sugar with water, a teaspoon at a time(3-4 teaspoons total), until it is the consistency of a thin glaze.
- Dip half of marshmallow in glaze, lightly shaking to remove excess.
- Roll glazed end of marshmallows in finely crushed candy canes(or peppermint candies, sprinkles, etc.).
- Place on waxed paper coated side up to set.
- Thread on skewers and serve with drink of choice.

- Line a large jelly roll pan with parchment paper. Skewer the marshmallows through the middle, 2 per stick. Set the sticks on the pan and set aside.
- Set up a double boiler on the stove. I place a small sauce pan on the stove and fill it with a few inches of water. Then I place a glass heat safe bowl on top (make sure the water isn’t touching the bowl). Then I heat it on medium low heat—do not let the water boil.
- Place chocolate in the bowl (either white or dark). Stir occasionally. Once chocolate is melted, add coconut oil and stir well. Then add the extract and mix once more.
- Begin to dip the marshmallows. I like to lower them into the bowl, one stick at a time, and use the spoon to scoop up the chocolate onto the sides of the marshmallow. Start with a thin coat (you will dip a second time). Using the spoon, wipe away any drips and carefully set the stick down on the parchment, setting down without moving to prevent a foot from forming. Repeat with all remaining sticks, you will not use all of the chocolate. Set the tray into the freezer for 10 minutes to let the chocolate set.
