SANDWICH ROLLS
I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

Steps:
- Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
- Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
- Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
- Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
- Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
- Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
- With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
- Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

FLORIAN'S SANDWICH ROLLS

- In a 2-cup glass measuring cup, dissolve yeast in mineral water; set aside. In the bowl of an electric mixer fitted with the dough-hook attachment, combine bread flour and 1 1/4 cups cake flour. With the mixer on low, gradually add the yeast mixture to the flour, and continue to mix until combined. Turn off the mixer and let rest, covered, for 10 minutes.
- In a medium bowl, whisk to combine the remaining 4 cups cake flour and 1 tablespoon salt. In a medium bowl, whisk to combine oil, simple syrup, and egg yolks. With the mixer on low, gradually add milk to the flour mixture, and beat until combined. Gradually pour in three-quarters of the oil mixture, and beat until the dough no longer sticks to the side of the bowl. Add the remaining one-quarter oil mixture, and continue to beat on medium-low for 3 minutes.
- Remove dough to a lightly floured baking sheet. Cover with plastic wrap, and let rest for 10 minutes.
- Preheat oven to 450 degrees. Line baking sheets with parchment paper. Divide dough into 23 three-ounce pieces. On a lightly floured work surface, roll each piece into a ball and place on baking sheets 4 inches apart. Let rise in a warm place until doubled in size, about 20 minutes. In a small bowl, whisk together egg and the remaining pinch salt. Brush dough with egg mixture, and bake until golden brown, 18 to 20 minutes. Remove from oven and cool on a wire rack. These are best eaten the same day.
MAKE-AHEAD SANDWICH ROLLS

- For the sandwich rolls: On each piece of flatbread, lay 2 slices of American cheese, a layer of shaved turkey, a layer of lettuce and finally a layer of shaved ham. Roll each flatbread into a large roll and wrap in plastic wrap. Refrigerate for several hours.
- For the chipotle mayonnaise: In a medium bowl, mix together the mayonnaise, diced chipotle and salt and pepper to taste.
- When ready to serve, remove the flatbreads from the fridge and slice each into 4 or 5 thick rounds. Serve with the chipotle mayonnaise, regular mayonnaise and Dijon mustard.

- In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface and punch down. Divide dough in half. Roll each portion to 3/4-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on lightly greased baking sheets. Brush tops with melted butter. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 350° for 10-15 minutes or until lightly browned.

My entire family absolutely loves these buns with sloppy joes. They hold their shape and don't fall apart when combined with the 'juiciness' of the sloppy joes. I'm not going to buy sandwich buns again. They couldn't compare to these.

- Combine milk, sugar, butter, and salt in small saucepan over medium heat; cook and stir until butter melts. Remove from heat and allow to cool to lukewarm.
- Combine 1 cup bread flour, egg, yeast, and milk mixture in the bowl of a stand mixer fitted with a dough hook; beat at lowest speed for 1 minute. Let rest 5 to 10 minutes. Add 2 3/4 cups bread flour; mix at next-to-lowest speed until dough cleans sides of bowl and sticks to dough hook, about 2 minutes.
- Place in lightly greased bowl, cover, and let raise in warm place until doubled (about 1 hour).
- Turn dough out onto lightly floured surface, punch down to get out air bubbles, and shape into rolls, placing rolls onto 2 lightly greased baking sheets. Cover with waxed paper and let rise for another 45 minutes to 1 hour.
- Brush tops of buns with melted butter. Cover and let rise in a warm place until doubled, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven until lightly browned, 10 to 15 minutes.

- In a large mixing bowl or the bowl of a stand mixer add the flour, sugar, yeast, and salt. Whisk to combine. Add the warm water, oil, and barley malt syrup if using. Mix the ingredients together until you've formed a shaggy dough.
- To make by hand: Turn the dough out onto a clean counter. Knead by hand for 3 minutes. If needed, add a little extra flour (a tablespoon at a time), but expect the dough to start out sticky and get less sticky, turning more tacky, as you knead. Let the dough rest for 5 minutes, then knead an additional 4-5 minutes until you have a smooth and slightly tacky dough. The dough should be soft and a bit bouncy.
- If using a stand mixer: Using the dough hook, knead the dough on low speed for 3 minutes. Let the dough rest for 5 minutes, then turn the stand mixer back on and knead an additional 3 minutes. Turn the dough out onto a clean counter and knead by hand for 1-2 minutes, making any final adjustments to add more flour if needed. The final dough should be soft, bouncy, smooth, and slightly tacky.
- Place the dough into a lightly oiled large mixing bowl and turn to coat the dough in oil. Cover with plastic wrap or a lightly dampened towel and let rise for 1 hour. The dough should be 1 1/2 to 2x risen in volume.

- To make the starter or biga, combine the flour and yeast in a medium bowl, slowly add the 3/4 cup water. Mix until a rough dough forms. If needed, add up to 1 cup of water. Transfer the dough to a lightly-floured surface and knead for a few minutes until it becomes smooth. Place the dough in a lightly oiled bowl, turn to coat, then cover and let stand at room temperature for about 3 hours.
- Transfer to the refrigerator and let it chill overnight. In the morning, remove the biga from the refrigerator and let it stand at room temperature at least 1 hour before proceeding.
